Kohlrabi is a great keto vegetable option. Although it is referred to as German turnip, it is actually related to the cabbage family. It is commonly green in color; but it can also be white or purple. The flesh of kohlrabi ranges from white to light green. I love kohlrabi and usually saute it or serve it as a mash. But kohlrabi can also be eaten raw, as with this slaw dish. Kohlrabi has a wonderful unique taste. If you haven’t tried it, I’d encourage you to do so. It just may become one of your favorites! Kohlrabi is low in calories but is nutrient rich. It provides us with folate, magnesium, manganese, potassium, and vitamins B and C. It’s also a good source of fiber. One cup of kohlrabi contains just 3 net grams of carbs so it’s an awesome keto vegetable choice!
Can I use a different cabbage for my keto kohlrabi red cabbage slaw?
Absolutely! I chose to use red cabbage for this slaw because it adds such pretty color to the slaw. You can use green cabbage if you’d like. You could also use a combination of green and red cabbage. Cabbage is also a great keto food choice. Like kohlrabi, one cup of chopped raw cabbage contains just 3 net grams of carbs. Nutrient wise, cabbage contains calcium, folate, magnesium, potassium, and vitamins C and K. It too is a good source of fiber. Another great thing about cabbage is its versatility. It can be eaten raw or cooked. You’ll most often see raw cabbage either chopped or shredded and used for coleslaw and other salads. When cooking cabbage, you can boil, braise, grill, roast, saute, or steam it! Cabbage can be made into some amazing side dishes and can also be added to casseroles, soups, and stir fry dishes.
What ingredients do I need to make the dressing for this keto kohlrabi red cabbage slaw?
I love making homemade dressings, and this slaw dressing is creamy and delicious with just the right amount of sweet and tangy flavors. The creamy base of our dressing is keto mayonnaise. I used the Chosen Foods brand avocado oil mayonnaise. I like this one because there is no added sugar, the only oil it contains is avocado oil, and it is yummy! To add some tang to our dressing, we add apple cider vinegar and Dijon mustard. Then to add just a touch of sweetness and to balance out the flavors, we add some keto granulated sugar. The only other ingredients in our dressing are celery seed, salt, and pepper. I recommend you taste your dressing and add more salt if you’d like.

Ingredients
- 12 ounces kohlrabi, peeled and grated
- ½ head red cabbage, grated
- 2 tablespoons diced onion
- ½ cup keto mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon granulated sugar substitute (Swerve)
- ½ teaspoon celery seed
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large mixing bowl, add grated kohlrabi, grated cabbage, and diced onion. Stir to combine.
2. In a small mixing bowl, add remaining ingredients. Stir or whisk to combine.
3. Pour dressing over kohlrabi mixture and stir to combine.
4. Serve immediately, or store in a covered container, in the refrigerator until ready to serve.
