It’s incredibly easy to make this dish. You’ll first want to peel your kohlrabi. I cut my kohlrabi into wedges, but you can also slice kohlrabi. Whichever you choose, you’ll want to cut all your kohlrabi into similar sized pieces. This will ensure they roast evenly. If you cut yours into slices, you’ll want to check them for doneness sooner than if you cut them into wedges. To save having to wash a bowl, I toss my kohlrabi with the olive oil, garlic powder, salt, and pepper in the baking sheet I roast them in. For doneness, we like our kohlrabi fork tender. If you’d like yours firmer, you can roast them for a shorter amount of time. You will want to stir your kohlrabi every 10 minutes or so. This will help keep your kohlrabi from burning and all sides will get nicely and evenly browned.
What can I serve with this roasted kohlrabi?

Ingredients
- 2 pounds kohlrabi, peeled and chopped into wedges
- 2 tablespoons olive oil
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- Optional: top with chopped parsley or fresh grated Parmesan Cheese
Instructions
1. Pre-heat oven to 425 degrees.
2. On a rimmed baking sheet, toss kohlrabi with olive oil, garlic powder, salt, and pepper.
3. Roast for 30-40 minutes or until kohlrabi is fork tender. Stir every 10 minutes.
