Low Carb Crockpot Cheesy Sausage Dip

Ingredients
- 1 pound mild pork sausage
- 2 (8 ounce) packages cream cheese, cubed
- 2 (10 ounce) cans Ro-Tel diced tomatoes and green chilies, undrained
- 2 cups shredded cheddar cheese
- 1 tablespoon smoked paprika
Instructions
1. In a large skillet over medium high heat, cook sausage until no longer pink, breaking it up into small pieces as it cooks.
2. While sausage is cooking, put cubed cream cheese, undrained Rotel, shredded cheese, and paprika into a 6 or 7 quart crockpot and turn on high.
3. When sausage is cooked through, drain the fat. Add sausage to crockpot and stir to combine ingredients.
4. Cook on high for 1½-2 hours or until cream cheese is completely melted and mixture is heated through, stirring every 30 minutes.
Notes
You can use plain ground pork for this dip in place of the mild pork sausage if you'd like.
