We love turkey, so at Thanksgiving I always buy two big turkeys. I always roast the first one on Thanksgiving and then, at a later time, try out a fun new recipe with the second turkey. I make bone broth using the turkey bones, and it is absolutely amazing. And I love making fun new recipes with the leftover turkey. I love making crustless quiche. It is quick and easy to make, and also reheats well the next day. For this quiche, I used 2 cups of leftover turkey. I added 1 cup of white meat and 1 cup of dark meat. You can use all white, all dark, or a combination for your quiche. You can dice or roughly chop your turkey. If you’d prefer, you could even shred your turkey for this quiche.
What is the best kind of cheese to use for this leftover turkey crustless quiche?
I used shredded colby jack cheese, but you can use any good melting cheese for yours. You can also use a combination of cheeses if you’d like. Sometimes I’ll use one cheese for the quiche mixture, then top the quiche with cheddar cheese because of the beautiful crust it creates on the top of the quiche. Some good melting cheeses you could use for this dish include cheddar, gruyere, havarti, Monterey jack, mozzarella, pepper jack, provolone, and Swiss. I always buy blocks of cheese and shred them myself. Pre-shredded cheeses have added ingredients such as cellulose powder and potato starch which blocks of cheese do not contain. I also think when you shred your own cheese it tastes and melts much better.

Leftover Turkey Crustless Quiche

Ingredients
- Avocado oil spray
- 1 tablespoon butter
- ⅓ cup diced green peppers
- ⅓ cup diced red peppers
- 2 tablespoons diced onion
- 2 cups cooked, chopped turkey
- 6 eggs
- 1 cup heavy whipping cream
- 2 tablespoons fresh chopped parsley
- 1 teaspoon Dijon mustard
- 1 teaspoon tamari
- ¼ teaspoon pepper
- ¼ teaspoon poultry seasoning
- ¼ teaspoon salt
- 2 cups shredded colby jack cheese, divided
Instructions
1. Pre-heat oven to 375 degrees. Prepare a 9 or 10 inch pie plate by spraying with avocado oil spray. Set aside.
2. In a medium skillet, over medium heat, melt butter. Add peppers and onion. Saute until vegetables start to soften, 4-5 minutes
3. Add turkey. Saute until heated through, 4-5 minutes. Add to prepared pie plate.
4. In a large mixing bowl, add eggs. Whisk until smooth. Add heavy whipping cream, parsley, mustard, tamari, pepper, poultry seasoning, and salt. Whisk to combine.
5. Add 1½ cups shredded cheese and whisk to combine. Pour mixture over turkey mixture.
6. Top evenly with remaining ½ cup shredded cheese.
7. Bake for 35-45 minutes or until knife inserted comes out clean.
