Let’s talk mayonnaise!
There are two kinds of people, those who love mayonnaise and those who are wrong.😂I have always loved mayonnaise. After going keto, I began to look closely at the mayonnaise I was choosing to use and at the ingredients in various brands of mayonnaise. I like to stick to using avocado oil or olive oil for most of the dishes I make. Many prepared mayonnaises contain canola oil, high fructose corn syrup, modified corn starch, modified potato starch, msg, soybean oil, sugar, or sunflower oil. The good news is that there are some excellent options for buying prepared keto mayonnaise. My go-to mayo is from the Chosen Food brand and is an avocado oil based mayonnaise. Primal Kitchen is another brand that makes a good keto avocado oil based mayonnaise. You can also use homemade mayonnaise for this dish.
What other ingredients go into this keto tomato mayonnaise?
To our mayonnaise, we add fresh tomatoes. I used Roma tomatoes also known as plum tomatoes for my dish, but other types would work great as well. Some good alternatives are beefsteak tomatoes, vine ripened tomatoes, or heirloom tomatoes. I seeded my tomatoes before dicing them. You can save the insides and use in homemade marinara, spaghetti or pizza sauce, or add to soups and casseroles. Fresh parsley gives this mayonnaise a nice pop of color, flavor, and texture. If you want to substitute dried parsley, you’ll want to add about 2½ teaspoons of dried parsley in place of the 2 tablespoons of fresh. For seasoning, we use a simple, yet incredibly delicious, blend of seasonings. We add a mixture of paprika, garlic powder, and onion powder which gives our mayonnaise amazing flavor. If you’d like to add a smoky element, you can substitute smoked paprika for the regular paprika.
How can I serve this keto tomato mayonnaise?
You can serve this mayonnaise as a substitute for regular mayonnaise or as a fun dip. As a mayonnaise substitute, it works great both as a condiment and as an ingredient in your favorite dishes calling for mayonnaise. If using as a dip, some great low carb options to use as dippers include raw vegetables, cheese whisps, pork rinds, or keto crackers. When using as a condiment, you can top your burgers, sandwiches, or lettuce wraps with this tomato mayonnaise. It is also a great accompaniment for eggs and egg dishes, for meats, and for cooked vegetables. If you’d like to use this in place of regular mayonnaise in dishes, some great options are to add it to egg salad, deviled eggs, tuna salad, or any dishes, casseroles, dips, or sauces calling for mayonnaise.
