When you want a rich, creamy, and amazingly decadent smoothie, this keto raspberry strawberry cheesecake smoothie is the perfect choice! Enjoy!
This keto raspberry strawberry cheesecake smoothie is incredibly rich, creamy, fruity, and satisfying. It makes for a wonderful breakfast, snack, or dessert choice. You can even top it with some keto whipped cream for extra indulgence!
Let’s talk about our fruit!
There are many fruits that aren’t allowed when following a low carb keto plan because their carb count is too high. You’ll be happy to know, however, that most berries, when eaten in moderation, are a great keto option. For this smoothie, we are using raspberries and strawberries. One cup of raspberries contains about 7 net grams of carbs. One cup of strawberries contains approximately 7-8 net grams of carbs. For reference, one cup of blackberries contains about 6 net grams of carbs and one cup of blueberries contains about 17-18 net grams of carbs. Raspberries and strawberries are low-calorie foods and are nutrient rich! Raspberries contain folate, iron, magnesium, manganese, potassium, and vitamins C, E, and K. Strawberries provide us with a source of folate, magnesium, manganese, potassium, and vitamins A and C. Both also contain fiber. You can use fresh or frozen berries for this smoothie.
What other ingredients go into this keto raspberry strawberry cheesecake smoothie?
The creamy base for our smoothie starts with cream cheese. You’ll want to make sure your cream cheese is softened before using. I like to cube my cream cheese to make sure everything blends together perfectly. We then add unsweetened almond milk and heavy whipping cream. This ensures our smoothie will be amazingly rich and creamy and helps to keep it low carb. You could also use unsweetened coconut milk if you’d prefer. You’ll just want to make sure you use the coconut milk in a carton and not the kind that comes in a can. For my keto sugar, I used the Swerve brand. It contains zero calories, zero net carbs, and is delicious. It is also a one-to-one substitution for regular sugar since its sweetness level is so similar to regular sugar. The last ingredients we add are vanilla and a pinch of salt. Yum!
How do I make homemade keto whipped cream to use as a topping for my keto raspberry strawberry cheesecake smoothie?
It is unbelievably easy to make homemade keto whipped cream. Once I started making my own, I couldn’t believe I ever used anything else. This is because it is so rich, creamy, and delicious! For the best results, I recommend you chill your mixing bowl and beaters in the freezer for 15-20 minutes before using. Then to your chilled bowl, you’ll add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. You’ll want to beat your mixture until stiff peaks form. Stiff peaks mean when you remove your beaters, they form peaks which completely hold their shape. You can give your whipped cream a taste and add more powdered sugar if you’d like. You can also easily double this recipe.
