Cream cheese is a keto favorite since it contains a good amount of fat and is low in carbs. It’s also creamy and delicious! To our cream cheese, we add keto powdered sugar. I used the Swerve brand for my sugar. It contains zero calories and zero net carbs. I find it similar in sweetness and flavor to regular powdered sugar. We add just a little heavy whipping cream to thin out our cheesecake filling just a bit. The last two ingredients in our cheesecake filling are vanilla and a pinch of salt. If you’d like to experiment, you can use different extract flavors, such as almond or maple, if you’d like.

These treats are fun and easy to make, but I do have a few tips for making them. First, you’ll want to remove some of the insides of your strawberries, so you’ll have room to fill them. You can use a paring knife to do this. I used a small melon baller for this task. Next, you’ll want to make sure your cream cheese is softened before using. You have a couple good options for filling your strawberries. You can use a piping bag, and this makes for a very pretty presentation. Another option, resulting in what I like to call the rustic presentation,😊is to use a Ziploc bag with a corner cut out of it to fill your strawberries. Last, if you’d like to serve your berries setting upright, you’ll want to cut off a small slice from the bottoms of the strawberries before filling them.

Ingredients
- 16 ounces strawberries, hulled
- 8 ounces cream cheese , softened
- ½ cup powdered sugar substitute (Swerve)
- 1 tablespoon heavy whipping cream
- 1 teaspoon vanilla
- Pinch of salt
Instructions
1. Use a knife or melon baller to scoop out the center of the strawberries. If you'd like to serve your strawberries setting upright, cut off a small slice from the bottom of each strawberry. If you'd like to serve them on their sides, omit this step. Set strawberries aside.
2. In a medium mixing bowl, add cream cheese, keto powdered sugar, heavy whipping cream, vanilla, and salt.
3. Beat until mixture is smooth and creamy.
