For this scramble, we’re simply adding Dijon mustard, salt, and pepper to our eggs.

These eggs have amazing color and flavor! We start with sauteing green and red peppers with red onions and diced jalapeno in butter and olive oil. You can cook your vegetables to be as crisp or as soft as you’d like. By removing the seeds and membranes of the jalapeno, we’re removing a lot of the heat. If you want a spicier dish, you can add some of the seeds or membranes. We then add some cooked bacon and fresh chopped parsley. I usually have some cooked bacon in my refrigerator. If you’d like, you can cook your bacon, remove it to a plate, then use the bacon grease instead of butter and olive oil to make this dish. I used a combination of cheddar and mozzarella cheese for my scramble. You can use any good melting cheese or combination of cheeses for yours.

This is a filling dish that can be served as is for a great breakfast, brunch, or breakfast for dinner meal. If you’d like, you can top your eggs with some salsa, guacamole, or sour cream. Fiesta Scrambled Eggs
These fiesta scrambled eggs are as pretty as they are tasty! These eggs make for an awesome breakfast, brunch, lunch, or dinner option!
Ingredients
- 12 eggs
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon butter
- 1 tablespoon olive oil
- ½ cup diced green peppers
- ½ cup diced red peppers
- 3 tablespoons diced red onion
- 1 jalapeno, seeded, deveined, and diced
- 8 slices bacon, fried and crumbled
- 2 tablespoons fresh chopped parsley
- ¾ cup shredded cheddar cheese
- ¾ cup shredded mozzarella cheese
- Optional: top with salsa, guacamole, or sour cream
Instructions
1. In a medium mixing bowl, add eggs, mustard, salt, and pepper. Whisk until eggs are smooth. Set aside.
2. In a large skillet, over medium high heat, add butter and olive oil. When pan is hot, add peppers, onions, and jalapeno. Saute until vegetables start to soften, 5-7 minutes.
3. Add bacon and parsley. Stir to combine.
4. Pour egg mixture into skillet. Cook until eggs are almost cooked through.
5. Add shredded cheese. Stir and cook until eggs are cooked through and cheese is melted.
6. Top eggs with salsa, guacamole, or sour cream if desired.
