There are many varieties of cucumbers, the main being pickling, slicing, and English cucumbers. For this appetizer, I chose to use English cucumbers for a few reasons. First, their skin is thinner than regular slicing cucumbers. For this reason, you can leave the skin on them if you’d like. For a pretty presentation, I partially peeled mine to give them a striped appearance! Next, English cucumbers are longer and thinner than regular slicing cucumbers and I think make the perfect size rounds for this appetizer! English cucumbers are also a bit sweeter than regular ones. Last, the seeds in English cucumbers are very small, so as a bonus, you don’t have to remove them. Also, because the seeds are so small, English cucumbers are less juicy which helps to ensure your cream cheese mixture won’t slide off your cucumber rounds.
What ingredients go into the topping for our low carb cream cheese bacon cucumber rounds?
Our topping starts with cream cheese. This gives our mixture awesome creaminess and incredible taste. To this we add minced or very finely chopped cooked bacon. The addition of sour cream and heavy whipping cream adds creaminess and thins out our mixture to make it the perfect consistency. I used dried chives for my mixture, but you can use fresh if you’d like. If you use fresh, you’ll want to use ½ tablespoon of fresh chives in place of the ½ teaspoon of the dried. For seasoning, we simply add some garlic and onion powder. Since our bacon is salty, I recommend first tasting your mixture, then adding a little salt if you’d like. I used cherry tomatoes to make my cucumber rounds, but grape tomatoes would work great too.

This is such a fun appetizer to make, but there are a few things you can do to make sure yours come out perfectly! First, after you slice your cucumbers, if they’re at all wet, you can simply dab them with a paper towel to dry them off. Next, you’ll want to make sure your cream cheese is softened before using. One of the most important things about this dish is to make sure your bacon pieces are very small, especially if you plan to use a piping bag. If your pieces are too large, they won’t fit through the star tip. Don’t ask me how I know this.😉 I used a food processor to mince my bacon, but you can very finely chop it too. Also, if you’re using a plastic bag, you can cut a larger piece off the corner and get away with using larger pieces of bacon.

Ingredients
- 2 medium English cucumbers, sliced into 40 pieces
- 10 cherry tomatoes
- 8 ounces cream cheese, softened
- 4 slices bacon, fried and minced or very finely chopped
- 2 tablespoons sour cream
- 1 tablespoon heavy whipping cream
- ½ teaspoon dried chives
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
1. Place sliced cucumbers onto a large plate or platter. Set aside.
2. Quarter tomatoes and set aside.
3. In a medium mixing bowl, add remaining ingredients. Beat until smooth and combined.
4. Use a piping bag or plastic bag with corner cut off to pipe cream cheese mixture onto cucumber rounds. Alternately, spoon mixture onto cucumber rounds.
5. Top each cucumber round with a tomato slice.
6. Serve immediately, or refrigerate until ready to serve.
