Asparagus has a wonderful taste which I would describe as a bit earthy with a subtle hint of bitterness. If you’ve never eaten it, I’d encourage you to give it a try! Another wonderful thing about asparagus is that it can be prepared in a variety of ways and can easily be incorporated into numerous dishes. Asparagus can be boiled, broiled, grilled, roasted, sauteed, or steamed. It is often served as a side dish vegetable, and can be topped with bacon, cheese, or savory sauces. But it can also be added to casseroles, frittatas, quiches, omelets, salads, soups, and stir-fry dishes.

They can also be prepared ahead of time, so this salad comes together quickly when you’re ready to serve it. To our asparagus, we add hard-boiled eggs, bacon, and fresh grated Parmesan cheese. When I make a large batch of hard-boiled eggs, I usually boil them on the stove. But for smaller batches, I always use my Dash rapid egg cooker. It makes hard-boiled eggs quickly and they always peel great! For the bacon, you can use regular or thick cut bacon for this salad. For your cheese, I recommend starting with a block of Parmesan cheese and grating your own. This way you’ll be assured there are no added ingredients, and the taste and texture of fresh grated cheese is the best!

The vinaigrette for this salad comes together quickly and is amazingly delicious. You could also use this dressing for any lettuce or spinach salad. For my dressing, I started with a combination of olive oil and champagne vinegar. If you’ve never used champagne vinegar, you’re in for an awesome treat! If you’d like, you can also substitute white wine vinegar for your vinaigrette, and it will still be delicious! I have a confession. I love mustard and trying different kinds of mustard. Yes, this is one of the things that makes me happy!😊For my vinaigrette, I used a coarse grain Dijon, but regular Dijon would be a great choice too! If you want a kick, you could even use a spicy brown mustard for your vinaigrette. I recommend you taste your vinaigrette and add salt and pepper if you’d like.

Asparagus Salad with Dijon Vinaigrette

Ingredients
For the Dijon vinaigrette:
- ⅓ cup olive oil
- 2 tablespoons champagne vinegar
- 2 teaspoons coarse ground or regular Dijon mustard
- Salt and pepper to taste
For the asparagus salad:
- 1 pound asparagus, trimmed and cut into thirds
- 4 hard-boiled eggs, sliced
- 4 slices bacon, fried and crumbled
- ¼ cup fresh grated Parmesan cheese
Instructions
For the Dijon vinaigrette:
1. In a small mixing bowl, add all ingredients.
2. Whisk to combine. Set aside.
For the asparagus salad:
1. In a large stockpot, over high heat, boil asparagus to desired crispness level, 4-7 minutes. Remove to a cold water bath. Drain well,
2. To assemble salads, set out 4 plates.
3. Onto each plate, place ¼ asparagus with 1 sliced hard-boiled egg, and 1 slice fried and crumbled bacon.
4. Top each salad with ¼ Dijon dressing and 1 tablespoon fresh grated Parmesan cheese.
5. Serve immediately.
Notes
