They’re also great mashed for guacamole or other appetizer dips. Another great option is to stuff avocados with chicken or tuna salad.
What other ingredients go into this pepper jack guacamole?
To our avocados, we start with adding shredded pepper jack cheese. This adds a little spice to our guacamole and adds a nice textural element as well. I prefer to shred my own cheese. This way I know there are no added ingredients, and the texture is better too! I like to use a seeded tomato and will save the insides to use in sauces and homemade salsas. I added one diced jalapeno. A good thing to know about peppers is that the majority of their heat is contained in the seeds and membranes. So, if you’d like a spicier guacamole, you can add some of the seeds or membranes from your jalapenos. We then add lime juice, cilantro, red onion, and a little salt. I recommend giving your guacamole a taste and then you can add more salt if you’d like.
How can I serve this pepper jack guacamole?
You have some awesome keto options for serving this guacamole. For dippers, you can use cheese whisps, keto crackers or chips, or pork rinds. Raw veggies, such as broccoli, cauliflower, celery, cucumbers, or sliced bell peppers or radishes are some wonderful options for dippers. I also like to cut some cheese slices and use them as dippers. This guacamole can be used to top burgers or keto sandwiches. It can also be added to salads, keto tacos, or fajitas. It also makes a great addition to egg dishes, including scrambled eggs, omelets, egg casseroles, and crustless quiches. Ingredients
- 4 avocados
- 1 cup shredded pepper jack cheese
- 1 small tomato, seeded and diced
- 1 diced jalapeno, seeded and membranes removed
- Juice of 1 lime
- ⅓ cup chopped cilantro
- 3 tablespoons diced red onion
- ½ teaspoon salt
Instructions
1. Halve avocados and discard pits. Scoop out the avocado flesh and place into a medium bowl. Mash to desired consistency.
2. Add remaining ingredients. Stir to combine.
3. Serve immediately or cover with plastic wrap, pressing wrap down onto guacamole, and store in refrigerator until ready to serve.
