Baked Cheesy Salsa Chicken

Ingredients
For the taco seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
- ¼ teaspoon oregano
For the salsa chicken:
- Avocado oil spray
- 2 cups salsa, divided
- 6 bone-in skin on chicken thighs
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
Instructions
For the taco seasoning:
1. Add all seasoning ingredients to a small bowl.
2. Stir to combine and set aside.
For the salsa chicken:
1. Pre-heat oven to 350 degrees. Spray a13x9 inch baking dish with avocado oil spray.
2. Spread ½ cup salsa evenly over bottom of baking dish.
3. Season chicken on both sides evenly with taco seasoning. Place, skin side up, into baking dish.
4. Top chicken evenly with remaining salsa.
5. Bake for 50-70 minutes or until chicken reaches 165 degrees.
6. Sprinkle shredded cheese evenly over chicken thighs. Bake for 5 additional minutes, or until cheese is melted.
