Let’s talk about strawberries!
Most fruits are high in carbs and can’t be included into a keto plan. The great news is that, in moderation, most berries are a super keto choice. One cup of strawberries contains about 7-8 net grams of carbs. For comparison, one cup of blackberries contains about 6 net grams and one cup of raspberries contain about 7 net grams. One cup of blueberries come in at approximately 17-18 net grams of carbs. Strawberries are a low calorie but, but they’re nutrient rich. They provide us with folate, magnesium, manganese, potassium, and vitamins A and C. They also contain a source of fiber. You can eat your strawberries raw, eaten just as they are or added to desserts, dressings, salads, and smoothies. They can also be cooked or roasted and made into jams, jellies, and delicious sauces.
What other ingredients go into this strawberry almond butter keto cheesecake smoothie?
As the base for our smoothie, we combine cream cheese, unsweetened almond milk, and heavy whipping cream. This makes our smoothie incredibly rich and creamy. You can also substitute coconut milk for the almond milk. You’ll want to make sure it’s unsweetened and the kind that comes in a carton and not the kind in a can. I used the Swerve brand for my sugar. It is similar in sweetness to regular sugar. It also contains zero calories and zero net carbs. For your almond butter, you’ll want to check nutrition labels. I like to buy ones which contain only almonds or almonds and salt. You can use peanut butter for your smoothie if you’d prefer. Almond extract, vanilla, and salt add just the right amount of flavor and enhance all the other flavors in our smoothie.
How do I make homemade keto whipped cream to top my strawberry almond butter keto cheesecake smoothie?
It’s incredibly easy to make your own whipped cream. Once I started making my own, I couldn’t believe I ever used anything else.😊I recommend chilling your mixing bowl and beaters in the freezer for 15-20 minutes before using. Then to your chilled bowl, add 1 cup of heavy whipping cream, 2 tablespoons of keto powdered sugar, and 1 teaspoon of vanilla. Then you’ll simply beat your mixture until stiff peaks form. Stiff peaks mean when you remove your beaters, they form peaks which completely hold their shape. You can also easily double this recipe if you’d like to make a larger batch!

*I like to start with cold unsweetened almond milk so my smoothie will be nice and cold. You can also use room temp almond milk and refrigerate your smoothie until it’s cold.
*You can substitute blackberries or raspberries or use a combination of berries for your smoothie if you’d like.
