I made this low carb ground beef and turnip skillet especially for my husband. One of his favorite dishes throughout the years has been a ground beef and potato skillet. I knew I had to make a low carb keto version for him. It took a couple attempts, but this is the one that came remarkably close in taste and texture, so it’s a keeper for us! For this dish, we combine turnips, green and red peppers, and onions to help create an awesome and delicious skillet. Turnips are a great alternative to high carb potatoes! They aren’t the lowest carb vegetable, but they’re an awesome choice when eaten in moderation. Turnips are a low-calorie food, and they provide us with a source of both vitamin C and fiber. Turnips may have a slightly mild bitter taste, but the smaller ones tend to be less bitter. They have become one of my favorite vegetables! Another wonderful thing about turnips is that they’re a versatile vegetable which can be boiled, grilled, mashed, roasted, or steamed. To our turnips, we add a combination of green peppers, red peppers, and onions. I used a yellow onion for my dish, but a white onion would be an excellent choice as well.
Can I change up any of the ingredients in this low carb ground beef and turnip skillet?
You can absolutely change up the ingredients in this skillet to make it your own. I like to use ground beef for my skillet, but you could substitute with ground chicken, pork, or turkey if you’d like. For my saute, I use butter and olive oil; but you can use all butter or all olive oil if you’d prefer. For your bell peppers, you can use any color or color combination you’d like. I added garlic powder, but if you’d prefer, you could substitute with a couple minced cloves of garlic. You’ll want to add it to the other vegetables during the last couple minutes so it won’t burn. You can also add different vegetables to your skillet such as broccoli, green beans, or zucchini, just to name a few. Another fun option is to add some shredded cheese at the very end if you’d like a cheesy skillet!
How can I serve this low carb ground beef and turnip skillet?
This is a filling dish which can be served as a meal in itself. If you’d like, you could top your dish with some chopped olives, sour cream, or with sliced avocados. For a pretty presentation, you can also sprinkle some fresh parsley or chopped chives over your dish. A really fun option would be to top your dish with a fried or poached egg. Then again, I think this is a great option for all kinds of dishes!😊This dish pairs nicely with most any kind of salad. Another great choice is to serve this dish with some keto biscuits, cornbread, or English muffins. You could also add a side of any keto cooked vegetables.

Ingredients
- 1½ pounds ground beef
- ½ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 pound turnips, peeled and diced
- ⅓ cup diced green peppers
- ⅓ cup diced red peppers
- ⅓ cup diced onion
- ½ teaspoon garlic powder
- 2 medium tomatoes, chopped
- ½ cup beef broth
- 1 tablespoon tamari
Instructions
1. In a large skillet, over medium high heat, cook ground beef with salt and pepper until no longer pink. Break beef up into small pieces as it cooks.
2. Drain grease and remove ground beef to a bowl.
3. In the same skillet, over medium high heat, add butter and olive oil. When butter is melted add turnips, peppers, onions, and garlic powder.
4. Saute, stirring occasionally, 15-20 minutes, or until turnips are fork tender. If vegetables start to brown too quickly, lower heat to medium and saute until turnips are fork tender.
5. Add ground beef back to skillet, along with tomatoes, beef broth, and tamari.
6. Increase heat to high and simmer for 5 minutes, or until mixture is heated through.
