We combine both butter and cream cheese to make this cookie dough. I used salted butter for this dish, but you can use unsalted if you’d prefer. I recently made an edible keto cookie dough and combined butter with mascarpone cheese. That would be a great option for this edible dough as well. Some good things to know about cream cheese and mascarpone cheese is that they’re both mild flavored and their textures are soft. They are also both made using cow’s milk. As for their differences, cream cheese has a tangier flavor while mascarpone has a less tangy and sweeter taste. Cream cheese has a firmer texture while mascarpone has a creamier texture. The biggest difference between the two is in the amount of milk fat each contains. Cream cheese has a fat content of about 30-40% and the fat content of mascarpone contains about 60-75% fat.

To our butter and cream cheese, or mascarpone if you prefer, we add almond flour, keto powdered sugar, keto brown sugar, unsweetened cocoa powder, vanilla, espresso powder, salt, and keto chocolate chips. Yum! Did you know when making edible cookie dough with regular flour, it’s recommended to heat treat the flour because, like eggs, flour can harbor bacteria. The good news is that almond flour is completely safe to eat raw, just as it is! I used the Swerve brand for both my sugars. These sugars contain zero calories and zero net carbs and are delicious keto sugars. I love the addition of vanilla and salt for the flavor they bring. We use both unsweetened cocoa powder and keto chocolate chips to give these treats a double whammy of chocolate flavors! The espresso powder further enhances the chocolate flavor in this edible cookie dough!

I like to add the chocolate chips last and then beat just until they’re combined evenly in the dough. If you’d like, you can also stir in your chocolate chips. If you’d like smaller pieces of chocolate in your edible dough, you can chop up your chocolate chips. This sweet treat can be served as is or you can form it into balls. If you’d like to do this, you’ll want to chill your dough in the freezer for about 15 minutes before forming it into balls.

Ingredients
- ½ cup (1 stick) butter, softened
- 8 ounces cream cheese, softened
- ½ cup almond flour
- ½ cup powdered sugar substitute (Swerve)
- ¼ cup brown sugar substitute (Swerve)
- 2 tablespoons unsweetened cocoa powder, sifted
- 1 teaspoon vanilla
- ½ teaspoon espresso powder
- ¼ teaspoon salt
- ½ cup keto semi-sweet chocolate chips
Instructions
1. In a large mixing bowl, beat butter and cream cheese together until creamy and combined.
2. Add almond flour, powdered sugar, brown sugar, cocoa powder, vanilla, espresso powder, and salt. Beat until combined.
3. Add chocolate chips. Beat just until combined. If forming the dough into balls, chill the dough in the freezer for 15 minutes before doing so.
4. Serve immediately or store in the refrigerator until ready to serve.
