We marinate our pork loin in Italian dressing, then roast it with the marinade. You can marinate for 1-2 hours or overnight, so you can easily fit this into what works best for your schedule. This is a great main dish to add to your recipe rotation.

You will also know exactly what goes into them and can avoid unwanted ingredients. I have a go-to homemade keto Italian dressing that is quick and easy to make, and it is also delicious. My dressing combines olive oil, white wine vinegar, and Dijon mustard with a combination of herbs and spices, a little keto granulated sugar, and fresh grated Parmesan cheese. For your marinade, you can also substitute with any keto Italian dressing you’d like. You’ll want to check the ingredients to make sure there are no added ingredients you don’t want in your dressing. We marinate our pork loin in 3 cups of dressing, then when ready to bake, simply pour all of the marinade over the roast.

This is an awesomely easy dish to make, but there are some things you can do to ensure yours comes out perfectly every time. First, you’ll want to make sure you’re using pork loin and not pork tenderloin for this dish. Pork loin is a larger cut of pork that is wider and flatter than pork tenderloin. It also has a nice thick cap of fat on its top which pork tenderloin doesn’t have. Next, you can marinate your pork loin for 1-2 hours or overnight. I like to marinate mine in a large plastic container and flip it a couple of times while it marinates. Alternately, you can marinate in a large resealable plastic bag. For the juiciest possible pork loin, I recommend letting your pork loin set for 5-10 minutes before slicing. Last, you can serve your pork with some of the drippings if you’d like.

Ingredients
- 4 pound pork loin
- 3 cups keto Italian dressing
Instructions
1. Place pork loin into a large container or resealable plastic bag.
2. Pour 3 cups keto Italian dressing over pork loin.
3. Marinate in refrigerator 1-2 hours, or overnight. If marinating in a large container, turn pork loin once or twice.
4. When ready to bake, pre-heat oven to 375 degrees.
5. Place pork loin into a 13x9 inch baking dish. Pour all of marinade over pork loin.
6. Bake for 20-25 minutes per pound, or until internal temperature reaches a minimum of 150-160 degrees.
7. Allow roast to set 5 minutes before slicing.
