For this vinaigrette, we combine fresh chives, dill, and tarragon. I love this combination. Chives, to me, taste similar to mild green onions and bring great flavor to this vinaigrette. I love dill and love to add it to dressings, dips, and sauces. Tarragon is actually a member of the sunflower family, and it has a very distinctive flavor. It’s used in many French dishes, including the classic Bearnaise sauce. If you’d like, you can substitute other herbs. Some great options include basil, cilantro, oregano, parsley, rosemary, sage, or thyme. I love using fresh herbs for this vinaigrette and recommend using fresh if possible. If you want to substitute dried, you can easily do this. You’ll want to use 1 teaspoon of dried herbs in place of the 1 tablespoon of fresh.

The classic ratio for vinaigrettes is 3 parts oil to 1 part vinegar, but you’ll see many different ratios in any number of vinaigrette recipes. We do follow the 3:1 ratio for this vinaigrette. We start with olive oil. I love a good olive oil and I love visiting oil and vinegar shops. Here you can try olive oils from different parts of the world, and it’s amazing how different they all taste. But, for my everyday olive oil, I use the Kirkland brand extra virgin olive oil and it has deep, rich, and amazing flavor! To our olive oil, we add champagne vinegar. Champagne vinegar is milder and tastes distinctly different from white wine vinegar. You can, however, substitute with white wine vinegar for your vinaigrette if you’d like. We round out the flavors of our vinaigrette by adding Dijon mustard, keto granulated sugar, salt, and pepper.

This vinaigrette is a great option to serve as a salad dressing for any lettuce or spinach salads. But there are so many other ways you can serve it. It can be drizzled over cooked meats including beef, chicken, pork, and seafood. Your cooked vegetables will be extra special when you spoon a little of this vinaigrette over them. You can even use this as a condiment to top burgers, keto sandwiches, or lettuce wraps. If you’d like you can also use it as a dressing for vegetable salads, such as broccoli and cauliflower salads, or cucumber tomato salads, just to name a couple. You can also use this vinaigrette as a dip for raw veggies. Another great option is to use it as a marinade for meats or vegetables!
