Then you let your soup slowly simmer and fill your house with the most amazing aroma! This makes a big batch of soup, and it reheats great for leftovers too!

I love adding fresh vegetables to soups for the pop of color, flavor, and texture they bring. For this soup, we’re using a green and red bell pepper, diced onions, and minced garlic. The color combination of green and red peppers is one of my favorites, but you can use any color or color combination of peppers for your soup. I used a meaty ham bone I’d refrigerated after making a big ham. You can also freeze your hambone and use it when you’d like. You’ll want to let your ham bone simmer until the meat is tender and falling off the bone. If you’d like, you can also add some ham scraps, some of the rind or fat, but you will want to strain and discard them before serving. I ended up with one cup of chopped ham from my ham bone and added an additional 3 cups.
What kind of beans go into this low carb ham bone bean soup?
Have you given up hope of ever eating beans again because of their carb count? Well, I have great news for you! Black soybeans contain less than ½ the carbs of some beans, and in comparison to some kinds of beans they contain about ⅓ of the carbs. I used the Eden brand for my black soybeans, and they come in at just 5 net grams of carbs per ½ cup. My family can’t tell the difference between these beans and their high carb bean counterparts. There are all kinds of different opinions about soy and whether it is keto or not. I don’t use them frequently but am fine cooking with them once in a while.😉If you’d like to omit this ingredient from your soup, you certainly can. You can add some cauliflower florets or some riced cauliflower, or even some green beans, as a substitution if you’d prefer.
How can I serve this low carb ham bone bean soup?
You have some great low carb options for serving your soup. This is a filling soup that could easily be served as a complete meal in itself. If you’d like, you could serve your soup with some keto biscuits, cornbread, crackers, or English muffins. Another great choice is to serve your soup with a low carb vegetable. You could also serve this soup with a salad to make for a delicious soup and salad meal. Any green or vegetable salad, or even coleslaw could be served with this soup. A fun idea is to serve a few low carb appetizers, then serve this soup as the main dish. Of course, you’ll want to end your meal with a low carb dessert or two!

Low Carb Ham Bone Bean Soup
This low carb ham bone bean soup is an amazingly flavorful and hearty soup. This is the perfect way to make great use of a leftover ham bone!
Ingredients
- 3 tablespoons butter
- 1 medium green pepper, diced
- 1 medium red pepper, diced
- 1 cup chopped onions
- 2 garlic cloves, minced
- 1 meaty ham bone
- 8 cups chicken broth
- 2 cups water
- 1 teaspoon cumin
- 1 teaspoon ground turmeric
- 1 teaspoon oregano
- 1 teaspoon paprika
- 3 cups chopped ham
- 2 (15 ounce) cans black soy beans
- 1 cup heavy whipping cream
- 1 teaspoon xanthan gum
Instructions
1. In a large stockpot, over medium high heat, saute peppers and onions in butter 5-7 minutes, or until vegetables start to soften. Add garlic during last minute.
2. Add ham bone, chicken broth, water, cumin, ground turmeric, oregano, and paprika.
3. Increase heat to high and bring to a boil. Decrease heat and simmer for 1½ hours. Remove hambone and chop meat from the bone. Discard bone and add chopped meat to stockpot.
4. Add 3 cups of chopped ham, or enough to equal 4 cups total ham, to stockpot along with black soy beans and heavy whipping cream.
5. Simmer for 10-15 minutes.
6. Sprinkle xanthan gum over soup and whisk in to combine. Simmer for 5 additional minutes to allow soup to thicken.
