She didn’t have a written recipe, but hers turned out perfectly creamy and delicious every time. This dish fondly reminds me of grandma’s creamed spinach in its creaminess, taste, and texture; but this one is low carb and keto!

Spinach is an awesome leafy green vegetable choice when following a low carb keto plan. It is low in calories but high in nutritional content. Spinach contains antioxidants, calcium, folate, iron, magnesium, potassium, and vitamins A, B, C, E, and K. It is also a good source of fiber. You can eat spinach raw, or you can blanch, saute, or steam it. Spinach is also a wonderful addition to casseroles, dips, dressings, egg dishes, pestos, salads, sauces, smoothies, soups, and many more.
What’s the best way to cook the spinach for this awesome keto creamed spinach?
For this recipe, we are going to blanch our spinach. Blanching means we will add our spinach to boiling water and cook for just a short amount of time. Once your pot of water comes to a boil, you’ll simply add your spinach to the pot, cover with a lid, and cook for 3 minutes. It’s important to remove as much water from the spinach as possible. To do this, I pressed water out of the spinach with a spoon while it was in the colander. Then, once cooled enough, I wrapped the spinach in some paper towels and squeezed out as much water as I could. Then you simply need to roughly chop your spinach and it will be ready to add to your sauce!

Add your garlic during the last minute or so of sauteing so it doesn’t burn. You’ll want to make sure your cream cheese is softened and cubed to help ensure it melts. Also, you’ll want to stir or whisk your sauce frequently while it cooks. The heavy whipping cream will reduce and thicken your sauce as it cooks. I recommend using freshly grated parmesan cheese from a block of cheese. You’ll know there are no added ingredients and I think it melts better! Once the cheese is melted, simply add your chopped spinach and simmer until the spinach is heated through. This dish also reheats well either on the stovetop in a skillet or in the microwave.

Awesome Keto Creamed Spinach
This awesome keto creamed spinach reminds me of the creamed spinach my grandma used to make. I love this rich, creamy, delicious dish and hope you will too!
Ingredients
- 30 ounces fresh spinach, stems removed
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 tablespoons finely diced onion
- 3 garlic cloves, minced
- 4 ounces cream cheese, softened and cubed
- 1 cup heavy whipping cream
- ½ teaspoon salt
- ¼ teaspoon pepper
- ⅛ teaspoon nutmeg
- 1 cup freshly grated parmesan cheese
Instructions
1. Over high heat, bring a large pot of water to a boil.
2. Add the spinach. Place a lid on on the pot and cook for 3 minutes.
3. Drain spinach in a colander. Rinse with cold water.
4. When cool enough, squeeze out as much water from spinach as possible. Roughly chop spinach and set aside.
5. In a large skillet, over medium high heat, add butter and olive oil. Once butter is melted, add onion. Saute for 3-4 minutes, or until onion starts to soften. Add garlic during last minute.
6. Add cream cheese, heavy whipping cream, salt, pepper, and nutmeg. Simmer for 5 minutes, stirring frequently.
7. Decrease heat to medium. Simmer, stirring frequently, until cream cheese is melted, 2-3 minutes.
8. Add cheese and stir to combine. Simmer until cheese is melted, 1-2 minutes.
9. Once cheese is melted, add spinach. Stir to combine and simmer until spinach is heated through.
