Let’s talk about our chicken!
I like to cook using a variety of cuts of chicken, including everything from boneless skinless chicken breasts to a whole cut up chicken. For this dish, I used chicken drumsticks. Chicken drumsticks are dark meat chicken which makes them a bit higher in calories and fat than white meat chicken. But they’re also incredibly flavorful. Chicken breasts and wings are considered white meat, while thighs and drumsticks are considered dark meat. If you’d like, instead of drumsticks, you can use other bone-in and skin on chicken pieces to make this dish, but you may have to increase the cooking time to ensure your chicken is cooked to a minimum of 165 degrees. Some good options to use either in place of or in addition to drumsticks include bone-in chicken thighs, chicken leg quarters, or bone-in split chicken breasts.

How do I make these baked Italian chicken drumsticks?
This is an easy dish to make, but there are a few things you can do to ensure your chicken turns out perfectly every time. I used 3 pounds of chicken drumsticks which came out to 8 drumsticks. 2 drumsticks constitute one serving for this chicken. The marinade for our dish contains just 6 ingredients, but it makes our chicken both juicy and flavorful. You can marinate your chicken for as little as 30 minutes. Alternately, you can cover and refrigerate your chicken and marinate 2 to 4 hours or overnight. When you’re ready to bake your chicken, you’ll simply drizzle a couple of tablespoons of the marinade onto a rimmed baking sheet before placing your chicken pieces onto the sheet. You’ll want to discard the remaining marinade. Last, when baking your chicken, you’ll want to make sure you cook it to an internal temperature of at least 165 degrees.
