My family loves egg salad so I make it often. It’s also a dish I know everyone will eat as leftovers, so I make big batches! When I make a small batch of hard boiled eggs, I make them in my Dash rapid egg cooker. It’s one of my favorite kitchen appliances, and it’s also adorable.😊But for larger batches I simply boil my eggs on the stovetop. I do make extra so I’ll have some to add to lunches and for a quick and easy snack option. For our dressing, we combine just a few simple but delicious ingredients to give our egg salad awesome flavor. We combine keto mayonnaise, yellow mustard, salt, paprika, and pepper for our dressing. If you’d like, you can substitute Dijon mustard for the yellow. And if you’d like to add a little smoky element, you can use smoked paprika in place of regular paprika.
How do I make these BLT egg salad lettuce wraps?
These lettuce wraps are so fun and easy to make. I used heart of romaine lettuce leaves, which are the center leaves of romaine lettuce. They hold up quite well when filled with our egg salad mixture. You can also use regular romaine or butter lettuce for your wraps. I do try to use similar sized lettuce leaves for my wraps. When filling your lettuce, don’t fret if some of the lettuce leaves tip a bit to the side. You can just hold them straight while you fill them, then rest them on their sides. I place all my lettuce onto plates or a platter, then fill them evenly with the egg salad mixture. You can then top the egg salad evenly with the bacon and then with the tomatoes. I used a vine ripened tomato for my wraps, but a Roma would be a great choice as well.

BLT egg salad lettuce wraps are amazingly fun and delicious! They’re perfect to serve for lunch, brunch, or dinner!
Ingredients
- 8 romaine lettuce leaves
- 8 hard boiled eggs
- ½ cup keto mayonnaise
- 1 teaspoon yellow mustard
- 1 teaspoon salt
- ½ teaspoon paprika
- ½ teaspoon pepper
- 8 ounces bacon, fried and crumbled
- 1 medium tomato, diced
Instructions
1. Rinse lettuce leaves and pat dry. Place onto plates or a serving platter. Set aside.
2. Chop eggs and add to a medium mixing bowl.
3. in a small mixing bowl, add mayonnaise, mustard, salt, paprika, and pepper. Stir to combine. Add dressing to chopped eggs and stir to combine.
4. Fill lettuce leaves evenly with egg salad. Then top evenly with bacon and tomatoes.
