This BLT keto egg salad is such a fun twist for egg salad! We combine hard-boiled eggs, bacon, lettuce, and tomatoes and toss them in a creamy delicious dressing to make this awesome salad. Not only is this salad incredibly tasty, but it also has super texture, and it’s low carb and keto.

I love the crunch of iceberg lettuce and that is what I used for my salad. Romaine would be another good option. You can either shred or chop your lettuce for this salad. For tomatoes, I quartered 10 cherry tomatoes for this egg salad. Depending on the size of your tomatoes, you can choose to halve or quarter yours. If you’d like to use other kinds of tomatoes, you definitely can; but the texture of your dish will change depending on the size you cut your tomatoes pieces into.

Ingredients
- 16 hard boiled eggs
- 10 cherry tomatoes, quartered
- 8 slices bacon, fried and crumbled
- ½ cup chopped lettuce
- ¾ cup keto mayonnaise
- 1 tablespoon dill pickle juice
- 1 tablespoon yellow mustard
- ¼ teaspoon pepper
- ⅛ teaspoon salt
Instructions
1. Peel and chop eggs. Place in a large mixing bowl.
2. Add tomatoes, bacon, and lettuce. Stir to combine. Set aside.
3. In a small mixing bowl, add remaining ingredients. Stir to combine.
4. Pour mayonnaise mixture over egg mixture. Stir until combined and egg mixture is completely coated with dressing.
