Let’s talk about radishes!
When I was growing up in Wisconsin, we had a large garden and grew radishes every year. I liked them then but have come to love them now! I was so happy to learn that even though they’re classified as a root vegetable, they are very low in carbs. They’re also a low-calorie food and rich in nutrients. Radishes are awesome eaten raw, as a crunchy side or added to all kinds of salads. When eaten raw, they range from being mild to having a nice bite to them. When cooked, however, they lose most of their bite but still retain amazing flavor. I love roasted radishes and find even people who don’t normally like radishes enjoy them! I have tried simply boiling radishes before; but I find the additional step of sauteing and browning them in some butter after boiling gives them the perfect flavor and texture.
Are these boiled radishes with onions difficult to make?
This is an easy dish to make, but there are a few things you can do to ensure yours will turn out perfectly every time! We start with combining whole radishes, diced onions, chicken broth, water, salt, and pepper in a medium saucepan. If you’d like, you can substitute with vegetable or beef broth. You’ll want to bring this to a boil and cook until your radishes are almost fork tender. The time will vary depending on the size of your radishes. I live at an elevation of about 7350 feet so mine tend to take a little longer. You’ll want to drain your radishes, then saute the radishes and onions in a little butter in a skillet until they’re browned. I stirred mine occasionally so all sides would get browned. Last, I like to remove the radishes from the heat and then toss in the fresh parsley.
How can I serve these boiled radishes with onions?
You have some great options for serving this vegetable dish. If you’d like, you can serve it topped with even more fresh chopped parsley. You can also top it with some chopped chives or green onions. I’d be remiss if I didn’t tell you how delicious these radishes are topped with some diced bacon and shredded cheddar cheese. You can serve these radishes alongside almost any keto main dish. They pair nicely with any cooked meat including beef, chicken, pork, seafood, or turkey. You can serve them with burgers, brats, keto sandwiches, or lettuce wraps. They also make a nice addition to grilled chicken, roasts, and steaks. If you’d like, you can serve them with keto casseroles as well. Any time you’d like to add a delicious side to your favorite keto mains, these radishes are a great choice!

*If you cook some bacon to top your radishes with, you can saute your radishes and onions in some bacon grease instead of butter.
