When you want a beautiful and delicious salad, this Caesar salad with keto croutons is a perfect choice! We start with classic Caesar salad ingredients but make our croutons using chaffles to keep it low in carbs. You can serve this salad as a starter salad or can serve it as a main dish salad by tossing in some grilled chicken or salmon!

The dressing is fairly straight forward and easy to make. Please note this recipe uses white wine vinegar and not distilled white vinegar. White wine vinegar is milder and not nearly as sour as distilled white vinegar. I used anchovy paste in this recipe. You can also use anchovies if you’d like. One anchovy fillet averages about ½ teaspoon of paste. Anchovy paste is usually saltier than anchovies, so you may have to adjust the amount of salt in your dressing if using anchovy fillets.

I LOVE, LOVE, LOVE my Dash mini waffle maker! It makes the perfect sized chaffles to use for sandwiches. This recipe will make 8-9 mini chaffles. If you use ¼ cup croutons on each salad, you’ll have some for leftovers. Hurray! Or you can always snack on some as you work.😉My husband, Brian, bought me my Dash mini waffle maker for Christmas, so you’ll notice the adorable snowflake design on the bottom grate. The original Dash has regular waffle grates on both sides. You need at least one of these in your life!
Helpful Hints:
*Refrigerate any leftover dressing and croutons. The dressing thickens up in the refrigerator. Simply take it out of the refrigerator and let it set for about 15 minutes and it will be perfect to serve.
*If you use a regular sized waffle maker, it will make about 4 large chaffles.

Caesar Salad with Keto Croutons
This Caesar salad with a zesty homemade dressing comes complete with keto croutons! This is salad comfort food at its best! This makes a great starter or simply toss in some grilled chicken or salmon and you’ll have a complete meal.
Ingredients
For the Caesar dressing:
- 2 hard boiled egg yolks
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons white wine vinegar
- 2 garlic cloves, minced
- 2 teaspoons anchovy paste
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ⅛ teaspoon pepper
- ⅓ cup extra virgin olive oil
For the croutons:
- 4 eggs
- ½ cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups shredded mozzarella cheese
- Avocado oil spray
- 2 tablespoons extra virgin olive oil
- 1 teaspoon grated Parmesan cheese
- ⅛ teaspoon garlic powder
- ⅛ teaspoon rosemary
For the Caesar salad:
- 10 cups chopped Romaine lettuce
- ½ cup Parmesan cheese, grated
Instructions
For the Caesar dressing:
1. Combine all dressing ingredients except for the olive oil in a food processor. Process until creamy and smooth. Slowly add olive oil and process until mixed. Alternately, in a medium sized bowl, whisk together all ingredients except for the olive oil. Whisk until creamy and smooth. Add the olive oil and whisk until combined.
For the croutons:
1. Preheat oven to 325 degrees.
2. Plug in mini waffle maker to heat.
3. In a medium sized bowl, add eggs and beat lightly.
4. Add almond flour, baking powder, and salt. Stir until completely combined. Add mozzarella cheese and stir until combined.
5. When waffle maker is hot, spray top and bottom surfaces with avocado oil. Add approximately ¼ cup of chaffle batter to waffle maker. Close cover and heat for 3 minutes or until browned.
6. Remove chaffle and set aside. Repeat process of spraying with avocado oil and heating chaffles until all batter is used.
7. Cut up chaffles into crouton sized pieces. Place in a 9x13 inch pan. Pour olive oil over chaffles. Sprinkle grated parmesan cheese, garlic powder, and rosemary over chaffles pieces. Stir to combine.
8. Bake for 20 minutes, stirring chaffles after 10 minutes.
For the Caesar salad:
1. Chop romaine lettuce into bite sized pieces.
2. Grate the Parmesan cheese.
3. Place 2½ cups of chopped romaine into 4 salad bowls.
4. Top each salad with 2 tablespoons of dressing.
5. Top each salad with ¼ cup of croutons and 2 tablespoons of grated Parmesan cheese.
