Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 14 ounces cooked smoked sausage, sliced
- 1 medium green bell pepper, diced
- ½ cup diced onion
- 2 garlic cloves, minced
- 2 cups cooked cauliflower rice
- 1 (15 ounce) can black soy beans, drained
- 1 (10 ounce) can Rotel diced tomatoes and green chilies
- 2 teaspoons Cajun seasoning
Instructions
1. In a large skillet, over medium high heat, add butter and olive oil.
2. Once butter is melted, add sausage, peppers, and onion. Saute until sausage is browned and vegetables start to soften, 7-10 minutes. Add garlic during last minute of sauteing.
