Using rotisserie chicken is a quick and easy option for making this chicken salad.

There are a few things we do to keep our salad low carb and to make it incredibly delicious! First, it only takes a little onion to give this salad taste and texture. This helps to keep the carb count down. Cheese and sour cream are naturally low carb; but I always check nutrition labels to make sure I’m getting the lowest carb count possible. My preferred keto mayonnaise is from Chosen foods and made with avocado oil. It contains zero calories and zero net carbs. It is also similar, in taste and texture, to regular brown sugar. Ingredients
- 4 cups cooked and diced chicken
- 2 tablespoons diced celery
- 2 tablespoons diced onion
- 4 ounces shredded cheddar cheese
- ⅓ cup keto mayonnaise
- ¼ cup sour cream
- 1 tablespoon brown sugar substitute (Swerve)
- 1 tablespoon fresh chopped chives
- 1 tablespoon lemon juice
- ½ teaspoon Dijon mustard
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
