To our cooked meat and onions, we add diced tomatoes. You can use regular or petite diced tomatoes for this dish. Whichever you choose, you’ll want to add the tomatoes and all the juice. For seasoning, we start by adding tamari. Tamari is gluten free soy sauce. If you want to avoid soy, you can substitute with coconut aminos. For seasoning, we add garlic powder, salt, pepper, and smoked paprika. You can use regular paprika in place of the smoked if you’d prefer.

We add just two additional ingredients to this dish, which helps to make it amazingly cheesy and amazingly filling. First, we add riced cauliflower. You can buy a head of cabbage and use a box grater or a food processor to rice it. You can also use frozen riced cauliflower, which is what I prefer to use. I find frozen riced cauliflower to be softer and I prefer its texture. I microwaved my frozen cauliflower for a few minutes, until it was tender before adding it to the skillet. If you use fresh riced cauliflower, you can either steam it or saute it in a skillet with a little avocado or olive oil until it’s softened. For cheese, I used shredded colby jack cheese. Alternately, you can use any good melting cheese. I do recommend buying a block of cheese and shredding it yourself as it melts the absolute best!

Ingredients
- 1½ pounds ground beef
- ½ medium onion, diced
- 1 (14.5 ounce) can diced tomatoes
- 1 tablespoon tamari
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon smoked paprika
- 2 cups riced cauliflower, cooked
- 2 cups shredded colby jack cheese
- Optional: top with chopped green onions
Instructions
1. In a large skillet, over medium high heat, cook ground beef with onions. Saute until cooked through, breaking beef up into small pieces as it cooks. Drain grease.
2. Add diced tomatoes, tamari, garlic powder, salt, pepper, and smoked paprika. Stir to combine.
3. Add cauliflower rice and stir to combine. Simmer, stirring occasionally, until mixture is heated through.
4. Add shredded cheese. Stir and cook until cheese is melted.
