You can absolutely indulge in awesome comfort food when following a low carb keto plan and this casserole is proof of that. Watch out as this dish is also a bit addictive!
Let’s talk about Palmini noodles!
If you’ve never tried Palmini noodles, I’m so excited for you! For this dish, we’re using linguini noodles. Palmini noodles are made from hearts of palm which is the vegetable harvested from the core of specific palm trees. This makes them a low calorie and low carb food choice. But let’s get to the really good stuff! When prepared correctly, the texture of Palmini linguini is amazingly similar to regular pasta. Is it the exact same? Nope. Is it pretty close and a great keto option? Absolutely! Palmini is actually a brand name, but I just recently tried Trader Joe’s hearts of palm linguini and was extremely impressed with its texture. Whatever brand you use, you’ll want to rinse the noodles, then boil them until they reach to your desired consistency. I do find I have to boil the Trader Joe’s noodles for a shorter time than Palmini noodles.
What other ingredients go into this cheesy ground chicken Palmini noodle bake?
Since we’re making a white sauce for this dish, I decided to use ground chicken for the meat. If you’d like, you could substitute with ground turkey. We add diced onions to the ground meat which adds both flavor and texture to this dish. For the creamy base of our sauce, we combine cream cheese, heavy whipping cream, and sour cream. This helps to create an amazingly rich and thick sauce. For seasoning, we add salt, pepper, garlic powder, and nutmeg. I used mozzarella cheese for this sauce, but Monterey jack would be a great option as well. For the topping, I chose to use colby jack cheese as it melts to create a beautiful topping to this dish while it cooks. If you’d like, you could use mild, medium, or sharp cheddar as a great substitution! I do recommend shredding your own cheese as it melts the best.
How can I serve this cheesy ground chicken Palmini noodle bake?
This is a filling comfort food dish that is a meal all in itself. It makes for a super lunch or dinner choice. You also have some awesome low carb options to add to this dish. A green salad, using lettuce or spinach would be a great starter for this main dish. A Caesar salad is always a great choice. If you’d like, you could also start your meal with a keto soup. Another great option is to serve this noodle bake with some keto biscuits, cornbread, or English muffins. Any cooked low carb vegetable can be served as a delicious side as well. Some great options include asparagus, broccoli, Brussels sprouts, cauliflower, green beans, spinach, and zucchini. A couple of our favorite sides are loaded roasted radishes and boiled radishes! Of course, you’ll want to end your meal with a decadent keto dessert!😊

Cheesy Ground Chicken Palmini Noodle Bake
This cheesy ground chicken Palmini noodle bake is a perfect comfort food casserole! This is an awesome rich and creamy dish that will always satisfy!
Ingredients
- Avocado oil spray
- 1 pound ground chicken
- 2 tablespoons diced onions
- 2 (12 ounce) packages Palmini linguini
- 4 ounces cream cheese, softened and cubed
- ½ cup heavy whipping cream
- ½ cup sour cream
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ teaspoon garlic powder
- ⅛ teaspoon nutmeg
- 1 cup shredded mozzarella cheese
- 1 cup shredded colby jack cheese
Instructions
1. Spray a 9x13 inch baking dish with avocado oil spray. Set aside.
2. In a medium skillet, over medium high heat, add ground chicken and onions. Saute until chicken is cooked through, breaking it up into small pieces as it cooks. Drain grease if necessary. Spread evenly into prepared baking dish.
3. Drain Palmini noodles and rinse well. In a medium saucepan, add noodles and enough water to cover. Bring to a boil over high heat. Boil 5-10 minutes or to desired consistency. Drain well.
4. Add noodles to ground chicken mixture and stir to combine. Pre-heat oven to 350 degrees.
5. To same medium skillet, add cream cheese, heavy whipping cream, sour cream, salt, pepper, garlic powder, and nutmeg. Cook, over medium heat, for 10 minutes or until cream cheese is melted.
6. Add shredded mozzarella cheese and cook until cheese is melted. Pour over chicken and linguine. Stir to combine ingredients. Top evenly with shredded colby jack cheese.
7. Bake for 20-25 minutes, or until heated through.
