You can use regular or thick cut bacon to make this dish. I like to dice my bacon, then saute it. Alternately, you can fry your bacon slices to your desired crispness level and crumble them. I love most all kinds of cheese and I used all colby jack to make this dish. You could, however, use any good melting cheese or combination of cheeses to make this dish. I do recommend starting with a block of cheese and grating it yourself as it melts the absolute best.

Cheesy Loaded Cauliflower Bake
This cheesy loaded cauliflower bake is a creamy and decadent dish! The addition of bacon and cheese takes it over the top in flavor!
Ingredients
- 1 large head cauliflower, cut into florets
- Avocado oil spray
- 2 cups shredded colby jack cheese, divided
- 6 slices raw bacon, diced
- 4 ounces cream cheese,softened
- ½ cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Notes
1. Steam cauliflower for 15-20 minutes, until fork tender.
2. Pre-heat oven to 375 degrees. Spray an 11x7 inch baking dish with avocado oil spray. Add steamed cauliflower to prepared baking dish.
3. In a medium skillet add diced bacon. Cook over medium heat to desired crispness level. Drain grease and remove bacon to a plate. Add ⅔ bacon to cauliflower. Toss to combine.
4. Add 1½ cups of shredded colby jack cheese to cauliflower and toss to combine.
5. Add cream cheese, sour cream, garlic powder, and onion powder to skillet. Cook over medium heat, stirring occasionally, until mixture is smooth.
6. Pour mixture over cauliflower and toss to coat cauliflower in sauce. Top with remaining ½ cup shredded cheese and ⅓ bacon.
7. Bake for 20-25 minutes or until heated through. Allow to set 5 minutes before serving.
