Helpful Hints:
*You can spray your measuring cups with oil spray (I use avocado oil spray) as this keeps the peanut butter and coconut oil from sticking to the cup and it makes them easily slide right out of the cups.
*You can use either actual chocolate molds (I used a plastic mold and a silicone mold to make these), or you can line a miniature muffin tin and use it. This recipe made 16 chocolates using molds. If your tin makes a different number, you can either do a calculation using the total number of chocolates made to come up with nutritional information, or you can cut your pieces to make 16 total chocolates and use the nutritional information from the recipe card below.
My son is my official, self-appointed, expert chocolate taster. Hey, we all have to have some special qualities that set us apart! He is still a bit unsure about this whole keto thing; but don’t worry, I’m turning him around. So, when I asked him to try these chocolates, he got one out and cut it in half. About 5 seconds later, both halves were gone. In fact within less than 24 hours, most of the chocolates have mysteriously disappeared from the freezer! Wait, there goes another…but this time it was my daughter!
