For this delicious salsa, we start with combining tomatoes, cucumbers, onions, garlic, scallions, a jalapeno, and fresh cilantro. Yum!😊Although we love blender salsa and salsa with diced tomatoes and vegetables, I wanted this salsa to be chunky. So I chopped my tomatoes and cucumbers into bite sized pieces. I did seed my cucumbers, but you can skip this step if your cucumbers have small seeds, especially if using English cucumbers. For our seasoning mix, we combine chili powder, cumin, keto granulated sugar, salt, and pepper. I used fresh lime juice, but you substitute with a couple of tablespoons of bottled lime juice if you’d like. A drizzle of olive oil completes this salsa perfectly!

Ingredients
- 2 pounds tomatoes, chopped into bite sized pieces
- 2 medium cucumbers, peeled, seeded, and chopped
- ½ medium onion, diced
- 1 jalapeno, seeded, deveined, and minced
- 2 garlic cloves, minced
- 2 green onions, chopped
- ½ cup fresh chopped cilantro
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon granulated sugar substitute (Swerve)
- ½ teaspoon salt
- ¼ teaspoon pepper
- Juice of 1 lime
- 1 tablespoon olive oil
Instructions
1. To a large mixing bowl, add tomatoes, cucumbers, onions, jalapeno, garlic, green onions, and cilantro.
