I like the ease of using a bag of coleslaw mix; but sometimes I like to make my own mixture for coleslaw. This slaw starts with a combination of green cabbage, red cabbage, and carrots. This is what is typically found in bagged coleslaw mixes. You can use different amounts of green and red cabbage if you’d like. I normally don’t add carrots to dishes because of their carb count; but we are only using a small amount for this coleslaw. You can leave them out if you’d prefer. I used a combination of green and red peppers for my slaw because I love the color this brings to the dish. You can use any color or color combination you’d like for your coleslaw. We only add a small amount of onion to this dish. It’s amazing how just a little bit of onion adds incredible flavor to dishes.

There are a few things we do to make this dressing turn out amazingly creamy and tasty while also keeping it keto and low carb. First, we start with a combination of keto mayonnaise and sour cream. This gives our dressing amazing creaminess without adding many carbs. I used the Chosen Foods brand avocado oil mayonnaise, but you can use any keto mayonnaise you’d like. To our creamy base, we add apple cider vinegar and Dijon mustard. These provide amazing flavor and provide the perfect amount of tang for our dressing. We add some keto sugar to balance our flavors. I used the Swerve brand as it contains zero calories and zero net carbs, yet it is delicious! For seasoning, we simply add celery seed, salt, and pepper. I always recommend you taste your coleslaw and add more salt and pepper if you’d like.

You have a great variety of ways to serve this coleslaw as it pairs so nicely with so many dishes! This coleslaw will be a welcomed addition to any barbecue, get together, party, or potluck. Coleslaw pairs well with all meats, including beef, chicken, pork, and seafood. If you’d like, you can serve this with any number of keto casseroles. Ingredients
- 12 ounces green cabbage, thinly sliced
- 4 ounces red cabbage, thinly sliced
- ⅓ cup grated carrots
- ¼ cup diced green peppers
- ¼ cup diced red peppers
- 1 tablespoon finely diced onion
- ½ cup keto mayonnaise
- ½ cup sour cream
- 2 tablespoons apple cider vinegar
- 2 teaspoons Dijon mustard
- 2 teaspoons granulated sugar substitute (Swerve)
- 1 teaspoon celery seed
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large mixing bowl, place green and red cabbage, carrots, green and red peppers, and onion. Set aside.
2. In a small mixing bowl, add remaining ingredients.
Stir to combine.
3. Pour dressing mixture over cabbage mixture. Stir until completely combined.
