I used regular cucumbers to make my salad, but English cucumbers are a great choice as well. I sliced, then halved my cucumbers. If you’d like larger pieces, you can simply slice yours. One of the great things about this dish is that you don’t have to peel the cucumbers! For tomatoes, you can use Roma or vine ripened tomatoes. For a fun change up, you could even use cherry or grape tomatoes. I love the color and flavor that red onions bring to this dish, but you could substitute with a yellow onion if you’d prefer. I diced my onions, but if you’d like, you could cut yours into thin slices.

Chosen Foods makes a good avocado oil mayonnaise and that’s what I used to make my dressing. For the keto granulated sugar, I used the Swerve brand. It contains zero calories and zero net carbs and is amazingly similar in its sweetness level to regular sugar. We then add a little apple cider vinegar to give our dressing a bit of acidity. You can substitute with white wine vinegar or champagne vinegar if you’d like. Last, we add salt, pepper, and fresh basil. You can always add more salt to taste if you’d like.

Ingredients
- 2 large cucumbers, sliced, then halved
- 2 medium tomatoes, diced
- ¼ medium red onion, diced
- ¼ cup keto mayonnaise
- ¼ cup sour cream
- 1 tablespoon granulated sugar substitute (Swerve)
- ½ tablespoon apple cider vinegar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ cup fresh chopped basil
Instructions
1. In a large mixing bowl, add cucumbers, tomatoes, and red onion. Toss to combine. Set aside.
