I also love the crunch raw cauliflower adds to a variety of salads. When cooking cauliflower, you can boil, grill, microwave, roast, saute, or steam it. You can serve it as a side dish, just as is, or you can be made into mashed cauliflower. Another awesome way to serve cauliflower is to rice it to use in place of regular rice.

What other ingredients go into this creamy BLT cauliflower salad?
To our cauliflower, we add bacon, diced tomatoes, and fresh spinach. Yes, I know this dish is called BLT, but I find the spinach holds up better than lettuce, and adds more texture, color, and flavor to the dish. Also, BST just sounds funny!😊For the bacon, you can use regular or thick sliced bacon. Sometimes I fry and crumble my bacon. I also like to cook it in the oven. Other times, I’ll use kitchen scissors to cut bacon, then fry it until it reaches a nice crispness level. For tomatoes, I used Roma tomatoes, also known as plum tomatoes, to make this salad. Alternately, you can use vine ripened tomatoes. I love using fresh spinach in all kinds of dishes, and I also like the convenience of using bagged spinach. I roughly chop the spinach for this salad. You can also tear it with your hands if you’d prefer.

The dressing for this salad is incredibly easy to make but it’s also incredibly flavorful. The creamy base for this dressing comes from the combination of keto mayonnaise and sour cream. When buying mayonnaise, you’ll want to make sure there is no added sugar or oils you don’t want. I also love making homemade mayo as it’s amazingly creamy and delicious, and it’s amazingly easy to make! To our mayonnaise and sour cream, we add rice vinegar, garlic powder, salt, and pepper. For the vinegar, you’ll want to make sure you’re using plain rice vinegar and not seasoned rice vinegar. Seasoned rice vinegar includes added sugar which also adds unnecessary carbs. After mixing your dressing in with your cauliflower mixture, you can give your salad a try and add more salt or pepper to taste.

Creamy BLT Cauliflower Salad
This creamy BLT cauliflower salad is incredibly flavorful and will be a huge hit every time you serve it! Enjoy!
Ingredients
- 1 large head cauliflower, cut into bite sized pieces
- 8 slices bacon, fried and crumbled
- 1 cup diced tomatoes
- 1 cup roughly chopped fresh spinach
- ½ cup keto mayonnaise
- ½ cup sour cream
- 2 tablespoons rice vinegar
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. In a large mixing bowl, add cauliflower, bacon, tomatoes, and spinach. Toss to combine.
2. In a small mixing bowl, add remaining ingredients. Stir to combine.
3. Pour dressing over cauliflower mixture and toss to combine.
