Tacos are such a wonderful comfort food dish, and these creamy crockpot chicken tacos are one of our favorites! We combine just a few simple but delicious ingredients with a homemade taco seasoning mix to make these chicken tacos. Prep time is quick, and the crockpot does the majority of the work. I love making homemade seasoning mixes. There are a few great reasons for making your own seasoning mixes. First, they’re quick and easy to make. You’ll also save money when you make your own. Also, when you make your own mixes, you can be assured there are no added ingredients that you don’t want. Last, when you make your own seasoning mixes, you can easily customize ingredients and amounts of ingredient to suit your taste preference. For our taco seasoning, we’re combining chili powder, cumin, garlic powder, paprika, salt, onion powder, pepper, and oregano. This is a fairly mild mix. If you’d like to add some heat, you can use chipotle chili powder instead of regular chili powder. You can also add some red pepper flakes to your seasoning mix to add more heat!
What other ingredients go into these creamy crockpot chicken tacos?
After spraying the crockpot with avocado oil spray, we add salsa and cubed cream cheese along with our taco seasoning. I like to use chunky salsa for this dish to end up with larger chunks of tomatoes. When buying salsa, you’ll want to check your nutritional labels to ensure there is no added sugar or other ingredients you don’t want. For the cream cheese, I always use full fat cream cheese. I do recommend you cube your cream cheese to help ensure it will melt evenly throughout the dish when cooking. After stirring this mixture together, we add our chicken breasts. You’ll want to use boneless and skinless chicken breasts for this dish. After adding the chicken, I stir to cover the chicken with the sauce. After 4-5 hours, you can remove the chicken and shred it, but I just shred it right in the crockpot.
How do I make keto cheese taco shells for serving these creamy crockpot chicken tacos?
Cheese taco shells are easy to make and are a fun low carb option for serving tacos! You’ll pre-heat your oven to 375° and line a baking sheet with parchment paper. Then shred cheddar cheese to make 1 cup. Place four circles of cheese, ¼ cup for each circle, onto the baking sheet, leaving space between the circles. You’ll want to bake your shells for 7-10 minutes or until they’re crisp and browned around the edges. You can dab some of the oil from the top of your shells if you’d like. Let them cool for about a minute. To form them into shells, I set a wooden spoon horizontally across 2 mason jars. I then place the cheese shells over the handle of the spoon and fold the cheese over to make shell shapes. Let these set for 5 minutes or until they’re set.

Ingredients
For the taco seasoning:
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
- ¼ teaspoon oregano
For the chicken tacos:
- Avocado oil spray
- 16 ounces chunky salsa
- 8 ounces cream cheese, cubed
- 2½ pounds boneless skinless chicken breasts
- Optional: Serve in a keto cheese taco shell or top with chopped green onions, diced tomatoes, shredded cheese, or sour cream
Instructions
For the taco seasoning:
1. Add all ingredients to a small bowl. Stir to combine.
For the chicken tacos:
1. Spray inside of crockpot with avocado oil.
2. Add salsa, cream cheese, and taco seasoning to crockpot. Stir to combine.
3. Add chicken and stir to combine chicken with the salsa cream cheese mixture.
4. Cook on high for 4-5 hours or on low for 6-8 hours.
5. Shred chicken with two forks and stir to combine with sauce in crockpot. Allow to cook for 10-15 minutes to allow chicken to absorb liquid.
6. Serve in a keto cheese taco shell or top with chopped green onions, diced tomatoes, shredded cheese, or sour cream if desired.
