Palmini is made from hearts of palm. Heart of palm is the vegetable harvested from the core of certain palm trees. It is low carb and low in calories. It is also gluten free, sugar free, and is a good source of fiber. One whole can of Palmini linguini contains 60 calories, zero grams of fat, 3 grams of protein, and 6 net grams of carbs. It contains 12 total grams of carbs and 6 grams of fiber which is how the 6 net grams of carbs is determined. One can of Palmini linguini makes for 3 modest servings or two larger servings…or one very hungry day serving!😊
How do I prepare the Palmini for this creamy Italian sausage Palmini linguini?
This Palmini linguini is already cooked. Straight from the can, without rinsing, it tastes like hearts of palm with a faint lemon taste. The texture, again straight out of the can, is reminiscent of very al dente pasta. This linguini can be drained or rinsed and drained, and then can be added to any number of dishes. I knew I wanted to rinse my Palmini and knew I wanted my linguini softer. So first I rinsed and drained my linguini. I brought a medium saucepan of water to a boil, then added the linguini and boiled it for 10 minutes. The result….perfect! If you’d like yours even softer, you can boil it longer. Of note, this linguine is shorter than regular linguine; but I think that makes it even better.

I made the sauce for my dish while I was boiling my linguini. First, you’ll want to cook your sausage with the red pepper until the sausage is cooked through. If you have excess grease, you’ll want to drain it from the sausage. After adding the chicken broth, heavy whipping cream, diced tomatoes, pepper, salt, and smoked paprika, you’ll want to bring the mixture to a boil, then decrease the heat and simmer for 5 minutes. Your sauce will thicken a bit while simmering. I recommend adding xanthan gum to further thicken the sauce. The addition of the grated parmesan will also thicken the sauce a bit. Then you’ll add your boiled and drained linguini and stir until the linguini is completely coated with sauce and is heated through. For a pretty presentation, you can top this dish with some chopped parsley or some additional grated parmesan cheese.

Ingredients
- 14 ounces Palmini linguine
- 6 ounces Italian sausage, casings removed
- ¼ cup diced red peppers
- ½ cup chicken broth
- ½ cup heavy whipping cream
- ⅓ cup diced, seeded tomatoes
- ¼ teaspoon pepper
- ⅛ teaspoon salt
- ⅛ teaspoon smoked paprika
- ½ teaspoon xanthan gum
- ⅓ cup freshly grated parmesan cheese
- Optional: garnish with parsley or additional grated parmesan cheese
Instructions
1. Drain and rinse Palmini. In a medium saucepan, boil Palmini for 10 minutes.
2. While Palmini is boiling, in a medium skillet, over medium high heat, cook sausage and peppers until sausage is no longer pink, breaking into small pieces as it cooks.
3. Add chicken broth, heavy whipping cream, tomatoes, pepper, salt, and smoked paprika. Increase heat to high. Bring to a boil. Decrease heat to medium high and simmer for 5 minutes.
4. Sprinkle xanthan gum over mixture and sfir in.
5. Add grated parmesan cheese. Decrease heat to medium and simmer 1-2 minutes or until mixture is thickened.
6. Add drained Palmini and stir until Palmini is coated with sauce and heated through.
7. Serve with optional toppings of chopped parsley or additional grated parmesan cheese if desired.
