I like to make the dressing for this shrimp salad while my water is coming to a boil to cook my shrimp! For our dressing, we start with a combination of keto mayonnaise, heavy whipping cream, lime juice, and olive oil. These create an awesome rich and creamy dressing with the perfect amount of subtle tartness from the lime juice. I like to use fresh lime juice, but you can use bottled if you’d like. Cilantro, celery, and red onion are then added which give our salad amazing texture and flavor. For seasoning, we simply add some garlic powder, salt, and pepper. If you’d like, you can substitute one or two fresh minced garlic cloves in place of the garlic powder. I recommend you give your dressing a taste and add more salt and pepper if you’d like.

Creamy Keto Cilantro Lime Shrimp Salad

Ingredients
- 1 pound shrimp
- ⅓ cup keto mayonnaise
- 2 tablespoons heavy whipping cream
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- ½ cup chopped fresh cilantro
- 1 stalk celery, chopped
- 2 tablespoons diced red onion
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ⅛ teaspoon pepper
Instructions
1. Bring a pot of water to a boil. Add shrimp and cook until done, 2-3 minutes.
2. Immediately place shrimp in a colander and rinse with cold water to stop cooking process. Alternately, place shrimp in a bowl filled with cold water. Once cooled, remove tails. Peel and devein if necessary.
3. In a medium mixing bowl, add remaining ingredients. Stir to combine.
4. Add shrimp and stir to completely coat shrimp in dressing.
5. Chill, covered, in refrigerator until ready to serve.
