I love cooking and I make most things homemade. But sometimes there are shortcuts which are quick and delicious options to making things completely homemade. I’ll often buy some green and red cabbage and cut it to make my own coleslaw mix. Sometimes I’ll add a shredded carrot and sometimes I leave that out. But I also love the convenience of buying a bag of coleslaw mix and think it’s a delicious option. I do tear up any large pieces of cabbage when I buy a mix. To our coleslaw mix, we add our star ingredient, cucumber. I used an English cucumber for my coleslaw, but you can also use a regular cucumber. In order to avoid having a watery coleslaw, I used a spoon to remove the seeds from my cucumber. For the onion, I used a red onion. Alternately, you can use a yellow onion if you’d like.
How do I make the dressing for this creamy keto cucumber coleslaw?
The dressing for this coleslaw comes together quickly, but it’s amazingly creamy and flavorful! The creamy base for our dressing comes from keto mayonnaise. I used the Chosen Food brand avocado oil mayo to make my dressing. When buying mayonnaise, you’ll want to make sure there is no added sugar or oils you don’t want. We then add apple cider vinegar which gives the perfect amount of acidity to this dressing. I added 1 tablespoon of keto sugar to my coleslaw, but you can add more if you’d like a sweeter dressing. For seasoning, we add celery seed, dill weed, salt, and pepper. If you’d like to use fresh dill, you’ll want to use about 1½ teaspoons of fresh in place of the ½ teaspoon of dried. You can also give your slaw a taste and add even more salt if you’d like.

Ingredients
- 16 ounce bag coleslaw
- 1 English cucumber, seeded and chopped
- ¼ medium red onion. diced
- ¾ cup keto mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon granulated sugar substitute (Swerve)
- ½ teaspoon celery seed
- ½ teaspoon dill weed
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. In a large mixing bowl, add coleslaw mix. Cut or tear up any large pieces.
2. Add chopped cucumbers and diced onions. Stir to combine ingredients.
3. In a small mixing bowl, add remaining ingredients. Stir to combine.
4. Pour dressing over coleslaw mixture. Toss to combine.
