This creamy keto garlic shrimp salad is a wonderfully delicious salad! It combines the perfect balance of creamy and crunchy elements!
I love shrimp, and this creamy keto garlic shrimp salad is one of my favorite salads! We combine shrimp with an awesomely creamy and delicious dressing, then add celery and red onion to add the perfect crunch. Then, of course, fresh minced garlic is added which gives this salad amazing flavor!
Let’s talk about our shrimp!
Shrimp is a great keto food choice. It’s low in calories and low in carbs. A 3 ounce serving of shrimp contains only 0.2 net grams of carbs. Shrimp also contains some important nutrients. It provides us with a source of iodine, iron, magnesium, niacin, phosphorus, selenium, zinc, and vitamin B12. It’s a good source of antioxidants and omega fatty acids as well. Shrimp has always been one of my favorite foods. I love it served cold as an appetizer, especially with homemade keto cocktail sauce. It’s also delicious, served chilled or hot, in salads. Shrimp is also amazing served hot in any number of sauces and for fajitas. You can boil, broil, fry, grill, roast, or saute shrimp. For this salad, we’re boiling our shrimp and it only takes a short amount of time to get them cooked through.
How do I make the dressing for this creamy keto garlic shrimp salad?
The dressing for our shrimp salad comes together quickly and is nice and creamy with the perfect amount of crunch! We start with combining keto mayonnaise, heavy whipping cream, lemon juice, and olive oil. I used the Chosen Foods brand avocado oil mayonnaise for my dressing. I also used fresh lemon juice, but you can use bottled if you’d like. For some awesome color, flavor, and texture, we add fresh chopped parsley, chopped celery, and diced red onion. You can use a yellow onion if you’d prefer for your dressing. Then comes the garlic! I used 4 large garlic cloves and found the garlicky flavor to be perfect. You can add even more garlic if you’d like. To finish our dressing, we simply add a little salt and pepper. I recommend you give your finished salad a try and can add more salt or pepper to taste.
