These creamy keto horseradish mushrooms are incredibly rich and flavorful! You can serve these as an appetizer or as a side dish!
I love mushrooms, and these creamy keto horseradish mushrooms are both incredibly delicious and incredibly low in carbs. I make a batch of these mushrooms and eat a couple every day as a special savory treat! This dish comes together in just 30 minutes, so it’s perfect to make on even your busiest of days!
Let’s talk about our mushrooms!
Mushrooms are an awesome keto food choice. They’re low in calories and low in carbs. One cup of mushrooms contains about 3 total grams of carbs and 1 gram of fiber. This results in 2 net grams of carbs per cup. Mushrooms are also a healthy choice as they provide us with antioxidants and some important nutrients and vitamins. I used cremini mushrooms to make this dish; but white mushrooms, also known as button mushrooms, work great too! Depending on the size of your mushrooms and on your preference, you can leave your mushrooms whole, or you can cut them in half. I often leave the smaller ones whole and cut the larger ones in half. You’ll want to saute your mushrooms until they’re nice and browned and only add the garlic during the last minute or so. This will ensure your garlic gets cooked but doesn’t burn.
What ingredients go into the sauce for these creamy keto horseradish mushrooms?
The sauce for these mushrooms is creamy, cheesy, and indulgently rich! We start by combining softened cream cheese, heavy whipping cream, and sour cream. Yum! This combination makes our sauce thick and delicious! We then add horseradish. I used regular prepared horseradish, but if you want more heat, you can use hot horseradish. It’s also amazingly easy to buy horseradish root and make homemade prepared horseradish. I love horseradish and find 2 tablespoons to be perfect for this dish. If you want, you can start by adding 1 tablespoon, then add more to taste. You can, of course, also add more than 2 tablespoons.😉For the Parmesan cheese, I recommend you buy a block of cheese and grate it yourself as it melts the absolute best! We then simply add a little salt and pepper to complete our sauce.
What are some ways I can serve these creamy keto horseradish mushrooms?
You have some awesome low carb options for serving these mushrooms. They’re perfect served as an appetizer, as a side dish, or even as a snack. As an appetizer, you can serve these mushrooms for barbecues, parties, potlucks, and all kinds of get togethers! They’re also great to serve as an appetizer for holiday and special occasion meals. You can serve these mushrooms as a side with most any keto main dish. They pair nicely with grilled meats, burgers, brats, and keto sandwiches. You can serve them with any kind of meat including beef, chicken, pork, and seafood. They can be served with roasts, meatloaf, and all kinds of keto casseroles. These mushrooms also make for a quick and easy savory snack. You can reheat them either in the microwave or in a pan or skillet on the stovetop.
