Creamy keto kohlrabi cabbage slaw is an amazingly flavorful and unique salad. This is a great dish to bring to barbecues and parties!
I love making different kinds of coleslaw and this creamy keto kohlrabi cabbage slaw is a fun and delicious one! We combine grated kohlrabi with chopped cabbage, and diced peppers and onions. Then we combine our slaw with a homemade creamy dressing. This makes a large salad, so it’s the perfect dish to serve to a crowd.
Let’s talk about the ingredients in our slaw mixture!
For our slaw, we start with kohlrabi. I grated mine using the largest grate on my box grater. This is how we like this slaw, but if you’d like more crunch, you could chop or dice your kohlrabi for this salad. I do recommend, if you grate your kohlrabi, you squeeze out the water after grating it, so you don’t end up with a watery coleslaw. I love the combination of green and red cabbage for slaw so that’s what I added to this dish. If you’d like, you could use all green cabbage for your slaw. I roughly chopped my cabbage, but you could thinly slice it as well to have larger pieces. You can also use any color or color combination of bell peppers for this slaw. I used a yellow onion for this salad, but a red onion would be a great choice too.
How do I make the dressing for this creamy keto kohlrabi cabbage slaw?
The dressing for this slaw comes together quickly and easily, and it’s delicious! For our creamy base, we combine keto Greek yogurt, keto mayonnaise, and sour cream. I used the Two Good brand for my yogurt. It’s impressively creamy and delicious. It’s also low carb and contains no added sugar. I used the Chosen Brand avocado oil mayonnaise for this dressing. When buying mayo, you’ll want to read the nutrition labels to ensure there is no added sugar or oils you don’t want. To our creamy mixture, we add apple cider vinegar to bring a little tang to our dressing and then add some keto granulated sugar to bring a touch of sweetness. For seasoning, we simply add celery seeds, salt, and pepper. After adding the dressing to the coleslaw mix, if time allows, I recommend refrigerating the salad for 1-2 hours or overnight to allow the flavors to meld.
What are some ways I can serve this creamy keto kohlrabi cabbage slaw?
You have some great options for serving this salad. It makes a large salad, so it’s a wonderful option to bring to get togethers and potlucks. It would also make a great addition to your next barbecue or picnic. This slaw pairs nicely with any kind of meat, including beef, chicken, pork, and seafood.
