Creamy Keto Mashed Cauliflower
This creamy keto mashed cauliflower is quick and easy to make. It is incredibly low carb and incredibly delicious!
Ingredients
- 1 medium head cauliflower, cut into florets
- ¼ teaspoon salt
- ⅛ teaspoon garlic powder
- 1 tablespoon butter
- Pepper to taste
- Optional toppings: chives, grated parmesan or cheddar cheese
Instructions
1. In a large saucepan, add chopped cauliflower to salted boiling water.
2. Boil until cauliflower is very tender, about 10 minutes.
3. Drain water from cauliflower, reserving ¼ cup of liquid.
4. Place drained cauliflower back into saucepan. Add half of reserved liquid. Using an immersion blender, blend cauliflower until smooth, adding remaining reserved water as needed.
5. Stir in garlic powder and butter. Add pepper to taste.
6. Top with chives, grated parmesan cheese or cheddar cheese if desired.
