I love using fresh ingredients whenever possible when making my favorite recipes. It’s also important to me to be able to recreate my favorite dishes and to make them low carb and keto. This recipe combines cucumbers, tomatoes, and red onions as the base for the salad. Cucumbers are an awesome keto option! They are a low calorie and low carb food. Cucumbers provide several nutrients including Vitamins C and K, magnesium, and potassium. Tomatoes are also a low-calorie food and a good source of vitamins C and K. They also provide folate and potassium. Onions do contain a moderate amount of carbohydrates which is why I use them in some of my recipes, but carefully limit how much I use. When used in moderation, you can absolutely add onions to your recipes to add flavor while still keeping your carb count low!

I love making homemade dressings! Making your own dressings ensures you know exactly what you are eating and eliminates unwanted ingredients in your recipes. This dressing combines some awesome fresh and low carb ingredients that work incredibly well together. I love the mixture of mayonnaise and sour cream for my dips and dressings. We then add fresh lemon juice with some basil, garlic powder, salt, and pepper to make for the perfect combination of flavors for this dressing. Sometimes simple really is better and this dressing is proof of that!
Here are some things you can do to ensure this salad comes out perfectly!
First, you want to remove some of the moisture from the cucumbers. This will help ensure your salad doesn’t end up too runny. Sprinkling some salt over the cucumbers and letting them set in a colander will draw out some of the liquid. I press the cucumbers with a wooden spoon to remove even more liquid. You can also dry them further with a paper towel if you’d like. I used dry basil in this recipe. If you’d like to use fresh, simply substitute 1 tablespoon of fresh basil for the 1 teaspoon of dry basil called for in the recipe. Last, give this salad a taste and add salt if you’d like.

Creamy Keto Tomato Cucumber Salad

Ingredients
For the salad:
- 2 cucumbers, peeled and sliced
- ½ teaspoon salt
- 4 medium tomatoes, chopped into wedges
- 2 tablespoons diced red onions
For the dressing:
- 2 tablespoons keto mayonnaise
- 2 tablespoons sour cream
- 1 teaspoon fresh lemon juice
- ½ teaspoon basil
- ¼ teaspoon garlic powder
- ⅛ teaspoon pepper
- salt to taste
Instructions
For the salad:
1. Place sliced cucumbers in a colander. Sprinkle salt over cucumbers. Place colander in the sink. Let cucumbers set for 30 minutes, tossing every 5-10 minutes. Once cucumbers have set for 30 minutes, use a wooden spoon to press out as much liquid from cucumbers as possible.
2. In a small bowl, place diced onions. Cover with water and let set for 5-10 minutes.
3. Place chopped tomatoes in a large mixing bowl. Drain the water from the red onions and add onions to the tomatoes. Add cucumbers and stir to combine ingredients.
For the dressing:
1. In a small mixing bowl, add mayonnaise and sour cream. Stir to combine. Add remaining dressing ingredients and stir to mix.
2. Pour dressing over tomato cucumber mixture. Gently stir to completely coat tomatoes and cucumbers with dressing.
3. Serve immediately or store, in a covered container, in the refrigerator until ready to serve.
