When you want a rich and satisfying soup, this creamy leftover turkey soup will satisfy! I think leftover turkey dishes are an awesome part of Thanksgiving, and this soup is one of our favorites! It is full of fresh vegetables, diced turkey, and cauliflower rice. We then create a creamy broth and finish it off with plenty of cheese! Yum!

I love turkey. In fact, every year at Thanksgiving I buy 2 big turkeys. We cook the first at Thanksgiving and roast it traditionally. Then, at a later time, I make the second one and try out different recipes with it. The day we make the turkey, we then make turkey bone broth from the turkey bones. We call it “liquid gold!” My entire family loves turkey, so I’m always looking for fun new dishes to make with leftover turkey. For this soup, I used 3 cups of cooked diced turkey. You can add even more if you’d like. For my soup, I used 2 cups of white meat and 1 cup of dark meat. You can use any combination you’d like. For our soup, I diced the into bite sized pieces. You can dice or roughly chop your turkey or can even shred it if you’d prefer!
How do you make the broth for this creamy leftover turkey soup and keep it low carb?
There are a few things we do to make our broth turn out rich, creamy, and delicious while also keeping it low carb and keto. First, we use a combination of chicken broth and heavy whipping cream to create a rich and creamy soup while keeping the carb count down. Next, we add just the right amount of seasonings to create an awesome flavorful broth. For our thickener, we add xanthan gum. One good thing to know about this ingredient is that a little goes a long way! One teaspoon is all that is needed to thicken this entire pot of soup. You can omit the xanthan gum, just know your soup will not be as thick. Last, we add shredded cheese which helps to thicken our soup and to make our broth rich and creamy. I prefer to buy a block of cheese and shred it myself.
How can I serve this creamy leftover turkey soup?
This is a filling soup and can be served as a complete meal! I like to top mine with some extra shredded cheese and some chopped parsley. If you’d like, you could serve it with some keto bread, biscuits, or English muffins. You can also add a salad for a nice soup and salad meal! You could also pair this soup with a keto sandwich or lettuce wrap. This soup would be an excellent choice for serving as a dish for brunch! You could even make a meal by serving a couple of appetizers with a nice bowl of this soup.

Creamy Leftover Turkey Soup
This creamy leftover turkey soup is an awesome way to use up leftover turkey! We combine leftover turkey with fresh vegetables and an amazingly creamy and cheesy broth to create a delicious soup!
Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- ½ cup diced celery
- ½ cup diced green peppers
- ½ cup diced red peppers
- ¼ cup diced onion
- 6 cups chicken broth
- 3 cups cooked and diced turkey
- 12 ounces riced cauliflower
- 1 cup heavy whipping cream
- 1 tablespoon tamari
- ¼ cup chopped fresh parsley
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon pepper
- 1 teaspoon xanthan gum
- 2 cups shredded cheddar cheese
- Optional: top with additional shredded cheese or chopped parsley, if desired
Instructions
1. In a large stockpot, over medium heat, add butter and olive oil.
2. To melted butter and olive oil, add diced celery, green and red peppers, and onions. Saute for 5 minutes or until vegetables start to soften.
3. Add chicken broth, chopped turkey, riced cauliflower, heavy whipping cream. tamari, parsley, Italian seasoning, salt, garlic powder, and pepper. Stir to combine.
4. Increase heat to high. Bring to a boil, then decrease heat and simmer until cauliflower rice is softened.
5. Sprinkle xanthan gum over mixture and whisk to combine.
6. Add shredded cheese and whisk to combine.
7. Top with additional shredded cheese or chopped parsley, if desired.
