I love making keto appetizers and snacks for my family, and these creamy olive cucumber bites were a big hit with them! They’re perfect for parties, potlucks, and all kinds of get-togethers. They are also a great appetizer for holiday meals. You can serve them plain or can top your bites with pecans or walnuts.

I grew up on a small dairy farm in Wisconsin, and we had a huge garden. I have fond memories of going out to the garden and picking much of what we were going to eat for dinner. And we always had an abundance of cucumbers! Cucumbers are a great keto food choice and are low in both calories and carbs. There are many varieties of cucumbers, but for these cucumber bites, you’ll want to use either regular cucumbers, also called slicing cucumbers, or English cucumbers. Slicing cucumbers are the cucumbers you most commonly find in the store. English cucumbers are longer and thinner, and you’ll find these wrapped in plastic. I used slicing cucumbers for my cucumber bites; and for a pretty presentation, I partially peeled them, which gave them a striped appearance. If your cucumber slices are wet, you can dry them by placing them between paper towels.
How do I make the topping mixture for these creamy olive cucumber bites?
It’s incredibly easy to make the topping for these bites. Our topping ingredients include cream cheese, fresh grated Parmesan cheese, chopped olives, sour cream, tamari, and salt to taste. For the olives, I used black olives, but you can use green, Kalamata, green olives stuffed with pimentos, or a combination of olives for yours. You’ll want to finely dice the olives, or you can use a mini food chopper to do this. Then you’ll beat everything together in a bowl using an electric mixer. You can also use a food processor if you’d like. Since olives vary in their levels of saltiness, I recommend giving your mixture a taste and adding salt if desired. You can use a piping bag, or you can use a plastic bag with a corner cut off to top your cucumber slices with the cream cheese mixture.
Can I top my creamy olive cucumber bites with anything other than pecans and walnuts?
You have some great options for topping your cucumber bites! You can simply serve them just as they are, topped with the cream cheese olive mixture. I served some of mine this way, then I topped others with pecan halves and the remainder with walnut halves. You could also top yours with some slivered almonds. If you want options other than nuts, you have some great choices. You can use cherry or grape tomatoes, cut in half or in fourths, to top your bites. This makes for a really pretty presentation. You can sprinkle some shredded cheese on top or sprinkle them with some fried and crumbled bacon. You could even top them with a halved olive. Another great option is to sprinkle some chopped chives, chopped green onions, or fresh dill or parsley over your cucumber bites.

Creamy Olive Cucumber Bites
These creamy olive cucumber bites are amazingly flavorful and will be a big hit every time you serve them! Enjoy!
Ingredients
- 2 large cucumbers, sliced into 40 pieces
- 8 ounces cream cheese, softened
- ⅓ cup fresh grated Parmesan cheese
- ⅓ cup finely chopped black olives
- 2 tablespoons sour cream
- 1 teaspoon tamari
- Salt to taste
- Optional: top with pecan or walnut halves
Instructions
1. Place sliced cucumbers onto a large plate or platter. Set aside.
2. In a medium mixing bowl, add cream cheese, Parmesan cheese, olives, sour cream, and tamari. Add salt to taste. Beat until combined.
3. Use a piping bag or plastic bag with corner cut off to pipe cream cheese mixture onto cucumber rounds. Alternately, spoon mixture onto cucumber rounds.
4. Top cucumber bites with pecan or walnut halves if desired.
5. Serve immediately, or refrigerate until ready to serve.
Notes
If your sliced cucumbers are at all wet, you can dry them with paper towels.
