Although shrimp is the star of this dish, it does need a little help to make it into a spectacular salad! We add celery, green onions, fresh parsley, and bacon to make this shrimp salad. Celery adds a nice crunch to our dish. You can dice your celery into small pieces or can roughly chop it into larger pieces if you’d prefer. I used green onions and used both the white and green parts to make this dish. If you’d like, you can substitute with some diced red or yellow onions. I used fresh chopped parsley to make my salad, which adds amazing color. If you want to use dried parsley, you’ll want to use about 1 tablespoon of dried in place of the ⅓ cup of fresh parsley. I love the addition of bacon to this salad. You can use regular or thick cut bacon for this dish.

To make our dressing, we combine keto mayonnaise, heavy whipping cream, sour cream, lemon juice, garlic powder, salt, and pepper. When buying mayonnaise, you’ll want to make sure there’s no added sugar or oils you don’t want. You can also make homemade mayonnaise, which is amazingly quick and easy to make, and results in a creamy and delicious mayonnaise. I always recommend using full fat sour cream which results in the creamiest and most delicious dishes. For lemon juice, I love using fresh lemon juice, but you can use bottled lemon juice if you’d prefer. For seasoning, instead of using garlic powder, you can substitute with a couple of grated garlic cloves. I recommend giving your salad a taste and adding more salt and pepper if you’d like.

Creamy Shrimp Bacon Salad
This creamy shrimp bacon salad is amazingly delicious and combines the perfect balance of creamy and crunchy textures!
Ingredients
- 2 pounds shrimp
- 2 celery stalks, diced
- 2 green onions, diced
- ⅓ cup fresh chopped parsley
- 6 slices bacon, fried and crumbled
- ½ cup keto mayonnaise
- 2 tablespoons heavy whipping cream
- 2 tablespoons sour cream
- 1 tablespoon lemon juice
- ½ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Bring a pan of water to a boil. Add shrimp and cook until done, 2-3 minutes.
2. Immediately place shrimp in a colander and rinse with cold water to stop cooking process. Alternately, place shrimp in a bowl filled with cold water. Once cooled, remove tails. Peel and devein if necessary.
3. In a large mixing bowl, add shrimp, celery, green onions, parsley, and bacon. Stir to combine.
4. To a small mixing bowl, add remaining ingredients. Stir or whisk until dressing is smooth and combined.
5. Pour dressing over shrimp mixture. Toss to coat shrimp with dressing.
6. Cover and refrigerate until ready to serve.
