Let’s talk about the creamy base for our dip!
This dip is incredibly rich and creamy. We achieve this by adding a combination of cream cheese, keto mayonnaise, and sour cream to make this dip. For the best results, you’ll want to start with softened cream cheese. I also recommend using full fat cream cheese to make this dip. For the mayonnaise, I used the Chosen Foods brand avocado oil mayonnaise to make my dip. When buying mayonnaise, you’ll want to make sure there is no added sugar, oils, or other ingredients you don’t want. You can also use homemade keto mayonnaise for this dip! Homemade mayonnaise is quick and easy to make and is amazingly creamy and delicious! I also recommend using full fat sour cream the richness and creaminess it adds.
What other ingredients go into this creamy sun-dried tomato dip?
To our cream cheese, mayonnaise, and sour cream, we add just a few simple but amazingly delicious ingredients to make this dip. We start by adding diced red peppers, sun-dried tomatoes, green onions, and capers. I love the touch of sweetness found with red peppers, but you can use any color bell pepper you’d like. For the sun-dried tomatoes, I used the ones packed in oil and drained them before adding. You can substitute diced red onions in place of the green onions if you’d prefer. If you’ve never tried capers, I think you’ll be pleasantly surprised with their briny and salty flavors. You can omit the capers and add about a teaspoon of salt in their place if you’d like. For additional seasoning, we simply add garlic powder, smoked paprika, and pepper. You can give your dip a taste and add some salt if you’d like a saltier dip!
How can I serve this creamy sun-dried tomato dip?
You have some awesome low carb options for serving this dip. It’s a perfect dip to serve with raw vegetables. Some wonderful low carb vegetables include broccoli, cauliflower, celery, cherry or grape tomatoes, cucumbers, mushrooms, radishes, and sliced bell peppers. And although they’re a bit higher in carbs, carrots can easily fit into a keto plan if eaten in small quantities. You can also use cheese whisps, keto crackers, and pork rinds as delicious crunchy dippers. Another fun idea is to use sliced cheese or meats such as pepperoni and salami as dippers. This dip can also be served as a delicious topping for burgers, keto sandwiches, and lettuce wraps. You can also serve it alongside grilled meats, egg dishes, and cooked vegetables. Another fun and delicious option is to add a little heavy whipping cream to some of this dip and serve it as a salad dressing!
