Appetizer dips are always such a hit, and this crockpot bacon cheeseburger dip is an amazingly cheesy and flavorful one! The prep time for this dip is minimal, and your crockpot does the rest of the work. And you have some great low carb options for serving this dip so you can easily enjoy it while following a keto plan!
Let’s talk about the meats in our dip!
Since this is a bacon cheeseburger dip, we’re adding both ground beef and bacon to it. We cook them both before adding them to the crockpot. For the ground beef, I used 93% lean ground beef, but 80% would work great too. You will want to drain the grease before adding the beef to the crockpot. We cook our beef with diced onions, salt, and pepper. I almost always have some fried and crumbled bacon in my refrigerator to add to salads, and that’s what I used for this dip. Sometimes I’ll cook the bacon and fry it on the stove or cook it in the oven, then crumble it. Other times, I’ll dice some raw bacon and saute it in a pan. For this dip, you can use regular or thick sliced bacon.
What other ingredients go into this crockpot bacon cheeseburger dip?
This dip is amazingly flavorful! It’s also rich, creamy, and cheesy! The ground beef, onions, salt, pepper, and bacon bring incredible flavor to our dip, so we just need to add a few additional ingredients to complete it. We add Rotel diced tomatoes and green chilies, cheese, heavy whipping cream, and tamari. I used regular Rotel, which has just a little heat to it. Alternately, you can use mild or hot Rotel. Whichever you use, you’ll want to add the entire can, juices and all. For the cheese, I used cheddar cheese. You can use mild, medium, or sharp cheddar. If you’d prefer, you could substitute with colby or colby jack cheese. I added cubed cheese, but you can use shredded as well. Either way, I recommend starting with a block of cheese as it melts the absolute best.

If you’re wondering, it’s actually quite delicious eaten just as it is out of a bowl.😊But you also have many keto choices to use as dippers! I like to serve this with raw vegetables as they make wonderful dippers. Some great choices include broccoli, cauliflower, celery, cucumbers, radishes, and sliced bell peppers. You can also serve this dip with cheese whisps, keto crackers, or pork rinds. Some other fun choices include using sliced cheese as dippers or meats such as pepperoni and sausage. This dip reheats well in either the microwave or on the stovetop, so it’s great to serve as a delicious leftover! You can even top your hotdogs or brats with it to make a keto chili cheese dog!

Crockpot Bacon Cheeseburger Dip

Ingredients
- 1½ pounds ground beef
- ½ medium onion, diced
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 (8 ounce) package cream cheese, cubed
- 8 ounces bacon, fried and crumbled
- 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
- 16 ounces cheddar cheese, cubed
- ½ cup heavy whipping cream
- 1 tablespoon tamari
Instructions
1. In a large skillet over medium high heat, add ground beef, onions, salt, and pepper. Cook until beef is no longer pink, breaking it up into small pieces as it cooks.
2. While beef is cooking, add cream cheese, bacon, Rotel, cheese, heavy whipping cream, and tamari to a 6 or 7 quart crockpot. Stir to combine.
3. When beef is cooked through, drain grease and add beef to crockpot. Stir to combine ingredients.
4. Cook on high for 2 hours or until cream cheese and cheddar cheese are completely melted and mixture is heated through, stirring every 30 minutes.
