This crockpot rotisserie chicken recipe creates a tender, juicy, and delicious whole chicken. Enjoy it by itself or use it in your favorite chicken recipes.
It’s a good idea to have a few go-to chicken recipes. This is especially true when you’re following a low carb keto diet. When you can easily make your own recipes and have keto food readily accessible to you, you’ll be more likely to stay on plan. Having a great crockpot keto rotisserie chicken recipe is a bonus since you can use the chicken in so many ways.
How can I use this crockpot keto rotisserie chicken?
This chicken is so juicy and flavorful you can eat it as a stand alone for your main course. It can make for a simple dinner when served with a side of low carb vegetables. One of the great things about this rotisserie chicken is that it can also be used in your favorite chicken recipes. It can easily be cubed or shredded to be used for keto appetizer dips, casseroles, pizzas, salads, sandwiches, soups, and tacos just to name a few.
Can this chicken be frozen?
You can easily freeze this chicken. I carefully follow my macros (daily intake % of fats, proteins, and carbs) using the Carb Manager app. Because of this, I like to freeze my chicken in separate freezer safe bags after measuring out portions. That way, I can simply pull out a bag, thaw, and heat for whatever recipe I want to use the chicken for. I also like to freeze the chicken bones to use at another time to make bone broth.
This is a great recipe for when you don’t want to use your oven, but want an incredibly easy recipe that will turn out great every time. I love salads and try to always save some of the leftover chicken to make a salad or two. I think it’s always an added plus when there are leftovers to use in another meal!
Helpful Hints:
*You can prep the chicken the night before and store in the refrigerator overnight if you’d like a time saver for the next day.
*You can choose to cook this in the crockpot on high or low, depending on what your day looks like.
