We combine fresh vegetables with bacon and cheese, then toss them with an awesome creamy dressing. The fresh vegetables in this salad add amazing flavor and provide much of the crunchy elements to it as well! We combine broccoli, cauliflower, celery, and onions to make this salad. If you don’t want to measure out 5 cups of broccoli and cauliflower, don’t worry because I have you covered!😊You can simply use 2 good sized bunches of broccoli and a small head of cauliflower, with no measuring involved! You can also chop up some of the stems along with the florets if you’d like. I used white cauliflower for my salad, which is the most common; but you can use orange or purple cauliflower for a fun change up! For the onion, I used a red onion, and I love the color and taste it brings. Alternately, you can use a yellow onion if you’d like.

Although the vegetables in this salad really shine through, they do need a little help to take this salad over the top in both flavor and texture. To them, we start by adding bacon. You can use either regular or thick cut bacon for this salad. Sometimes I fry and then crumble my bacon. At other times I dice my bacon and cook it. Either is a great option for this dish. We then add cubed cheddar cheese. You can use mild, medium, or sharp cheddar cheese for this salad. If you’d like, you could also substitute with colby, colby jack, gruyere, havarti, mozzarella, provolone, or even Swiss cheese. I love using cubed cheese for my salad, but if you’d like to use shredded cheese, go for it! To give our salad incredible flavor and amazing crunch, we add both pumpkin seeds and sunflower seeds.
How do I make the dressing for this crunchy keto broccoli cauliflower salad?
The dressing for this salad comes together quickly, but it’s amazingly creamy and delicious! For our creamy base, we add both keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil mayonnaise for my salad. When choosing mayonnaise, you’ll want to check your nutritional labels to ensure there is no added sugar or other ingredients you don’t want. To add a little tang, we add apple cider vinegar. Then to balance out our flavors and to add a touch of sweetness, we add some keto granulated sugar. I used the Swerve brand, but you can use your favorite for this salad. For seasoning, we simply add paprika, salt, and pepper. If you’d like to add a smoky element, you can use smoked paprika in place of the regular. I also recommend you give your salad a try and add more salt and pepper to taste.

Ingredients
- 5 cups chopped broccoli
- 5 cups chopped cauliflower
- 8 ounces bacon, fried and crumbled
- 8 ounces cheddar cheese, cubed
- 2 celery stalks, diced
- ½ medium red onion, diced
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- 1 cup keto mayonnaise
- ½ cup sour cream
- 2 tablespoons apple cider vinegar
- 2 tablespoons granulated sugar substitute (Swerve)
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon pepper
Instructions
1. In a large mixing bowl, combine broccoli, cauliflower, bacon, cheese, celery, onion, pumpkin seeds, and sunflower seeds. Stir to combine.
2. In a small mixing bowl, add remaining ingredients. Stir to combine dressing ingredients.
3. Pour dressing over broccoli and cauliflower mixture and stir to combine.
4. Serve immediately or refrigerate for 1-2 hours or overnight before serving.
